4 (4 ounce) boneless, skinless chicken breasts
2 tablespoons chicken seasoning
¼ cup Mazola® Corn Oil
3 tablespoons fresh lemon or lime juice
2 cups diced fresh mango
1 cup diced red bell pepper
3 tablespoons minced red onion
1 tablespoon fresh lemon or lime juice
2 tablespoons minced fresh cilantro
Salt and pepper to taste

Steps:

  • Preheat grill to medium heat, or between 350 degrees to 450 degrees F.
  • Trim excess fat from chicken, rinse and pat dry. If necessary, pound chicken to 1/2-inch thickness. Place chicken into a 1-gallon size resealable plastic bag. Add seasoning, oil and lemon juice to the bag. Seal bag and turn to thoroughly coat chicken.
  • Grill chicken over direct high heat for 6 to 8 minutes. Turn chicken and continue to cook for 6 to 8 minutes until cooked through. Transfer to a serving plate.

1/2 cup fresh pineapple, cubed with juice
1/4 red onion, diced
1 -2 minced garlic clove
3 green onions, tops and all, thinly sliced
1/2 red bell pepper, diced (yellow or orange)
1 jalapeno pepper, diced
1 lime, juice of
2 tablespoons fresh cilantro, minced (to taste)
1 dash sea salt
1 tablespoon coriander

Steps:

  • Peel and cut mango into cubes, discard seed.
  • Dice pineapple, saved juice.
  • All other ingredients can be diced in the food processor. Careful not to over "pulse" to too fine a texture.

  • 1. To make the shrimp tacos: In a large skillet over medium heat, add the olive oil. Add the chopped garlic and cook for about 1 minute. Add the cumin and red pepper flakes, and let the flavors blend together. Add the shrimp and toss. Carefully add the tequila and flambé. Season with salt and add the dried chipotle powder. Once shrimp are cooked, add the chopped cilantro and toss. 2. In a separate nonstick skillet over low heat, heat a whole-wheat tortilla until pliable, about 2 minutes on each side. 3. Plate one tortilla per person and serve three shrimp in each taco. 4. To make the spicy black beans: In a saucepan over medium heat, add the chopped onion and chopped garlic clove. 2 cups macadamia nuts, roughly chopped in a food processor
1 pinch cayenne pepper

4 tablespoons canola oil

Ponzu Sauce, recipe follows
Asparagus, recipe follows
Garlic Chips, recipe follows
2 cup glutinous rice (soaked 24 hours in refrigerator)
1/2 cup unsweetened coconut flakes
1 cup coconut milk
Salt and black pepper, to taste
Sugar, to taste
1/3 cup each: pineapple, mango, and papaya, medium dice
1 tablespoon jalapeno, finely chopped
2 limes, juiced
1/4 cup red onion, finely chopped
Salt and black pepper, to taste
1/4 cup shallots, sliced
2 tablespoons garlic, finely chopped
2 tablespoons butter
1/2 cup ponzu
2 tablespoons Mirin
2 cups dashi, recipe follows

2 dozen medium asparagus, tough ends removed

4 garlic cloves, thinly sliced
1 cup canola oil
1 piece kelp (1 by 1/2 inch)
2 cups bonito flakes
3 1/2 cups water

Steps:

  • Lay the 4 pieces of halibut on a clean work surface. Season each piece with the salt, pepper, and cayenne. Using a brush, quickly spread a thin layer of the egg whites on top of the fish and then sprinkle over the chopped macadamia nuts. Press the nuts into the fish to secure. Preheat the oven to 400 degrees F. Heat a large saute pan coated with the oil to medium heat. Place 2 pieces (or 4 if the pan is big enough) of the fish, macadamia side-down, in the pan and sear for 3 to 4 minutes, until the macadamias are golden brown. Flip the fish and cook for another 3 minutes. Repeat the process with the 2 remaining pieces of fish. Place all 4 pieces of fish in a baking dish and cook in the oven for another 8 to 10 minutes.
  • Form the Rice into a small flat disk in the center of the plate. Spoon some of the Salsa on top of the rice. Lean the fish against the rice and drizzle the sauce around the plate. Place the Asparagus against the fish and garnish with the Garlic Chips.
  • In a large bowl filled with water, soak the rice for 24 hours in the refrigerator. Fit a colander or steamer lined with leaves (lotus, banana, Napa) inside of a large stockpot filled with water and add the rice to the colander. Make sure that the water is not touching the colander. Steam the rice for about 25 to 30 minutes. When the rice is soft, remove it from the colander and place it into a large mixing bowl. Add the coconut flakes and milk to the rice and season with the salt, pepper, and sugar. Set aside.
  • In a medium mixing bowl, add the pineapple, mango, papaya, jalapeno, lime juice, and red onion. Toss gently and season with salt and pepper.
  • Prepare a saute pan over medium heat. Sweat the shallots, garlic, and 1 tablespoon of the butter, about 4 to 5 minutes. Add the ponzu, mirin, dashi, salt, and pepper and allow to boil. Remove from heat and pour in a blender. Add the miso, blend and add the remaining tablespoon of butter.
  • Preheat the oven to 350 degrees F. In an oven proof saute pan, combine the asparagus, garlic oil, salt and pepper and roast in the oven for about 5 minutes, until the asparagus are tender.
  • Prepare a saucepan over high heat and add the oil and the garlic. When the garlic becomes golden brown, remove from the heat. Strain the garlic and reserve both the garlic and the oil.
  • Wipe the kelp with a damp towel and then place it into a medium sized pot filled with water. Heat the water just before boiling, remove the pot from the heat, and remove the kelp. Place the bonito flakes in the water and allow them to settle to the bottom of the pot. Strain out the bonito flakes.

1 red onion, chopped
6 red radishes, chopped, plus 1 sliced for garnish
2 limes, peeled and cut into segments
1 handful fresh cilantro leaves
2 tablespoons extra-virgin olive oil
1 teaspoon Southwest Spice Mix, recipe follows
1 (2 to 3 pound) salmon fillet
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 ancho chiles, stemmed and seeded
2 tablespoons whole cumin
2 tablespoons whole coriander
1 cinnamon stick
1 tablespoon sweet paprika

Steps:

  • For the Salsa, put all the ingredients into a food processor and pulse until finely chopped; set aside.
  • Heat the grill to medium high.
  • Drizzle some olive oil over the salmon and season it with salt and pepper. Gently rub 2 tablespoons of the Spice Mix into the salmon. Pour some olive oil onto a paper towel and rub the grill with it - this will help to prevent the fish from sticking. Grill the salmon flesh side down for about 12 to 15 minutes.
  • To serve, spread most of the Salsa onto a platter and place the salmon, skin side down, on top. Garnish with more Salsa, radish slices, cilantro, and a drizzle of olive oil.
  • Put the ancho chiles, cumin, coriander, cinnamon stick, and paprika into a small dry skillet over medium-high heat, and toast the spices just until they begin to smell, about 1 minute. Empty into a spice mill and grind to a powder.

  • Preheat a grill to high heat.

Steps:

  • Toast the cumin seeds in a dry skillet over medium-high heat until fragrant, about 2 minutes. Place the cumin seeds, garlic, chile pepper, salt, olive oil, orange juice, and lemon juice into the bowl of a blender; grind to a coarse paste. Toss the chicken with the marinade, then place into the refrigerator, and allow to marinate for about 2 1/2 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a skillet over medium-high heat. Cook the chicken for 2 to 3 minutes on each side until browned. Place into the oven, and cook until the juices run clear, about 8 minutes. When the chicken is done, remove, cover with foil, and allow to rest for 3 to 5 minutes.

  • For the salsa: Combine all ingredients together in a mixing bowl. Make up to a day in advance. Keep covered in the refrigerator.

  • Preheat your grill at medium high heat. Begin by making the marinade for the mahi-mahi. Combine in a small bowl the jerk seasoning, pineapple juice, cayenne and cumin. Pour over the mahi and make sure the steaks are evenly coated. Set aside and start making your salsa. In a medium bowl, take the mango and cut the fruit into a small dice. Add your strained and rinsed black beans to the bowl, along with jalapeno pepper, red onion, lime juice, and mint. Gently toss with a spoon to combine and flavor with salt and pepper. When ready, place the sweet potatoes directly on the grill rack. Grill on one side for about 8-10 minutes. When you flip them over, add your fish steaks to the grill also. Cook steaks on one side for approximately 5-7 minutes. Flip them over (very carefully) and at that time your potatoes should be fork tender and ready to take off the heat. When fish is done, remove from grill. Serve each steak with 1/4 salsa and the grilled sweet potatoes.

  • Combine all ingredients in a sauce pan over medium heat and cook for 15-20 minutes stirring occasionally until the mangoes begin to break down.
  • Puree the mixture in a food processor or blender.

1 teaspoon cumin seed
3 cloves garlic, chopped
1 fresh red chile pepper, chopped
¼ teaspoon salt
2 tablespoons olive oil
5 teaspoons orange juice
5 teaspoons lemon juice
2 (8 ounce) boneless, skinless chicken breast halves
2 tablespoons olive oil
½ cup orange juice
1 teaspoon lime zest
1 teaspoon honey
1 teaspoon sweet soy sauce
¼ cup cold, unsalted butter, cut into pieces
½ cup diced mango
½ avocado
chopped fresh cilantro to taste
chopped fresh parsley to taste

Steps:

  • Toast the cumin seeds in a dry skillet over medium-high heat until fragrant, about 2 minutes. Place the cumin seeds, garlic, chile pepper, salt, olive oil, orange juice, and lemon juice into the bowl of a blender; grind to a coarse paste. Toss the chicken with the marinade, then place into the refrigerator, and allow to marinate for about 2 1/2 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a skillet over medium-high heat. Cook the chicken for 2 to 3 minutes on each side until browned. Place into the oven, and cook until the juices run clear, about 8 minutes. When the chicken is done, remove, cover with foil, and allow to rest for 3 to 5 minutes.
  • While the chicken is in the oven, whisk together the olive oil, orange juice, lime zest, honey, and soy sauce in a skillet over medium-high heat. Simmer until the orange juice has reduced to 1/3 of original volume and is beginning to get thick and syrupy. Once thick, remove from heat, and whisk in the butter pieces one at a time until melted; set aside.
  • To serve, place chicken on the plate and sprinkle with mango and avocado. Drizzle with the sauce, and garnish with cilantro and parsley.

3 mangos
1 red onion
2 bell peppers, any color works - i like to use a green and an orange because of the color
5 roma tomatoes
2 fresh jalepeños
1 lime
3 Tbsp cilantro
1 Tbsp chili pepper
1 Tbsp red pepper flakes
1 Tbsp basil, dried
salt and pepper, to taste

Steps:

  • 1. Chop all fresh ingredients into small pieces; mix in a large mixing bowl.
  • 2. Squeeze limes; mix well.
  • 3. Add spices; mix well.
