Baked macaroni with a sauce of cheddar and pepper jack cheese and Mexican chorizo.

Provided by Elise Bauer

Categories     Budget     Casserole     Comfort Food     Casserole     Cheese     Chorizo     Mac Cheese     Macaroni     Pasta

Time 1h

Yield 4

Number Of Ingredients 11

2 cups elbow macaroni
1 cup milk
1 teaspoon cornstarch
4 ounces shredded cheddar cheese (about 1 cup)
4 ounces shredded pepper jack cheese (about 1 cup)
6 ounces Mexican chorizo
1/2 cup minced red onion
2 Tbsp flour
2 teaspoons lime juice
2 Tbsp breadcrumbs
1 Tbsp butter

Steps:

  • Mix the cornstarch with the 2 cheeses in a bowl: and set aside. The cornstarch will help prevent the cheese sauce from getting too stringy.
  • Heat the milk: Put the milk into a small saucepan and heat until steamy. Keep warm while you are preparing the recipe, do not let boil.
  • Cook the macaroni pasta: Put 2 quarts of water, salted with 1 Tbsp salt, into a large pot and heat to a boil. Once the water is at a full boil, add the macaroni to the pot. Return to a boil, and cook, uncovered, for about 2 minutes less than the macaroni package specifies, so that it is al dente, cooked, but still firm to the bite.
  • Drain macaroni, preheat oven: When the macaroni is cooked, but still a bit firm, drain it and set aside. Preheat oven to 375°.

1 tablespoon olive oil
6 ounces Mexican chorizo, casing removed
1 small red onion, diced
1/2 red bell pepper, diced
2 jalapeños, diced
2 tablespoons all-purpose flour
1 cup milk, warmed

SPICY CHORIZO PASTA

Spicy Chorizo Pasta image

Macaroni and chorizo is classic Spanish comfort food. While iterations abound, it typically starts by frying smoked chorizo with a little onion, adding canned or fresh tomato and maybe some oregano, then letting it simmer into a thick tomato sauce. It's often topped with cheese and baked like a mac and cheese. Instead of fresh tomatoes, this recipe uses highly concentrated tomato paste, which is made by cooking down tomatoes for ages so you don't have to. The paste fries in the chorizo's rendered drippings for a very fast, silky, smoky and spicy sauce. When shopping for this recipe, look for Spanish chorizo, a shelf-stable sausage usually found near salami and other cured meats in the grocery store. Mexican chorizo is sold fresh and is made with different chiles and spices.

Time 30m

Yield 4 servings

Number Of Ingredients 7

Kosher salt and black pepper
1 pound orecchiette or other short pasta
1/4 cup olive oil
4 ounces Spanish chorizo, casing removed (see Tip), if necessary, and thinly sliced
3 tablespoons double concentrate tomato paste (or 6 tablespoons canned tomato paste)
3 garlic cloves, peeled and smashed
1/2 teaspoon red-pepper flakes

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook, according to package directions, until al dente. Reserve 1 cup of the pasta cooking water, then drain the pasta.
  • Meanwhile, in a large Dutch oven, heat the olive oil and chorizo over medium-high. Cook, stirring occasionally, until chorizo is crisp and brown, 2 to 3 minutes. Turn off the heat and use a slotted spoon to transfer the chorizo to a plate.
  • Return the pot to medium heat and add the tomato paste and garlic. Cook, stirring, until the tomato paste is caramelized and a shade darker, 3 to 5 minutes, covering the pan if the splattering is wild. Add the red-pepper flakes and a few grinds of black pepper, then remove from heat.
  • Add the cooked pasta and 1/2 cup of the reserved pasta water to the tomato mixture. Return the pot to the medium-high heat, and stir vigorously until the pasta is well coated. Add more pasta water until the sauce is glossy. Stir in the chorizo and season to taste with salt and pepper.

SPICY MACARONI AND CHEESE

Spicy Macaroni and Cheese image

From foodnetwork.com. This is the easiest way to make homemade mac and cheese that I've ever come across...in fact I've been altering all other mac and cheese recipes to reflect the method of prep in this recipe. I make this when I've got 15 minutes to throw together a meal (not including cooking time.) It doesn't hurt that this is a REALLY tasty macaroni recipe. Can be served as a side dish, but we're veggies so we usually eat it as the main dish. Hope you enjoy.

Tips:

  • Use a good quality cheddar cheese. This will make all the difference in the flavor of your mac and cheese. Look for a cheddar that is sharp and flavorful.
  • Don't overcook the macaroni. Al dente is the perfect texture for mac and cheese. If you overcook it, it will become mushy and lose its shape.
  • Add the chorizo and spices to the roux. This will help to infuse the mac and cheese with flavor. Be sure to cook the chorizo until it is browned and crispy.
  • Use a combination of milk and cream. This will give the mac and cheese a rich and creamy texture. You can also use all milk or all cream, but the combination of the two is ideal.
  • Don't be afraid to experiment with different toppings. Some popular options include breadcrumbs, grated Parmesan cheese, and chopped bacon. You can also add vegetables, such as broccoli or cauliflower.

Conclusion:

This spicy macaroni and cheese with chorizo sausage is a delicious and easy-to-make dish that is perfect for a weeknight meal or a casual gathering. The chorizo sausage adds a nice kick of heat, and the cheese is rich and creamy. With a few simple tips, you can make this mac and cheese even better.
