4 boneless chicken breasts, skin on (6 to 8 ounces each)

Steps:

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.

1 large yellow onion, sliced
Good olive oil
Kosher salt

2 lemons, quartered

6 cups (3/4-inch) bread cubes (1 baguette or round boule)

Steps:

  • Preheat the oven to 425 degrees F.
  • Take the giblets out of the chicken and wash it inside and out. Remove any excess fat and leftover pinfeathers. Toss the onion with a little olive oil in a small roasting pan. Place the chicken on top and sprinkle the inside of the cavity with salt and pepper. Place the lemons inside the chicken. Pat the outside of the chicken dry with paper towels, brush it with the melted butter, and sprinkle with salt and pepper. 1 tablespoon canola oil, plus more for grilling
1 teaspoon crushed red pepper flakes

2 lemons, zested and juiced, juice reserved for Brown Rice and Mushroom Salad
1 cup chicken broth
Kosher salt
2 cups brown rice
1/2 red onion, chopped
2 stalks celery, chopped
1 carrot, shredded
1/2 (8-ounce) package sliced mushrooms, chopped

  • For the chicken: Remove the skin from the chicken breasts and take the breasts off the bone separating out the tenders. Cut the breasts in half lengthwise. Put the breasts between 2 pieces of plastic wrap and pound them thin with a rolling pin or small skillet.
  • Put the chicken breasts in a resealable plastic bag, pour the oil into the bag, and add the red pepper flakes, salt and pepper, parsley, thyme, and lemon zest.
