My husband and I are retired, and I like to look for simple, speedy ways to cook. This thick cheesy dip, with the unusual addition of sausage, goes together in a jiffy. 1 package (8 ounces) cream cheese
1/2 cup sour cream
1/3 cup milk
1 tablespoon mayonnaise
1/2 teaspoon Worcestershire sauce
8 ounces fully cooked kielbasa or Polish sausage, finely chopped
1/2 cup sliced green onions, divided
1/4 cup grated Parmesan cheese
Assorted crackers or raw vegetables

Steps:

  • In a 1-1/2-qt. microwave-safe bowl, heat cream cheese, uncovered, on high for 45 seconds. Stir in the sour cream, milk, mayonnaise and Worcestershire sauce. Add the kielbasa, 1/4 cup of onions and Parmesan cheese; mix well. , Microwave, uncovered, on high for 2-3 minutes or until heated through, stirring once. Sprinkle with remaining onions. Serve with crackers or vegetables. Store in the refrigerator.

1 1/4 pounds smoked kielbasa (Polish sausage)
Good olive oil
1/2 cup good mayonnaise, such as Hellmann's
2 tablespoons Dijon mustard
1 teaspoon whole-grain mustard
1 teaspoon prepared horseradish
Kosher salt and freshly ground black pepper

Steps:

  • Slice the kielbasa crosswise 1/2 inch thick diagonally. Heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan, add the kielbasa, and cook over medium-high heat for 5 to 6 minutes, turning occasionally, until the kielbasa is nicely browned on both sides.
  • Meanwhile, in a medium bowl, whisk together the mayonnaise, Dijon mustard, whole-grain mustard, horseradish, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Serve the kielbasa hot from the pan with small wooden skewers and a dish of the mustard sauce on the side for dipping.

And now for something completely different! Trying to dress up Kielbasa I just kept adding stuff until it turned out yummy! Being a spice lover and looking for an easy mid-week fix that wasn't bland this worked out wonderfully! This is so rich & creamy it's perfect on a cold evening, so easy, so different, so yummy! I hope you enjoy!

2 tablespoons butter
2 tablespoons olive oil
2 lbs kielbasa (cut into bite sized pieces)
1 (1 lb) box bow tie pasta (or whatever floats your boat)
1 (16 ounce) jar prego pasta sauce
1 (1 ounce) packet crushed red pepper flakes
1 red bell pepper (cut into bite sized pieces)
1 cup sour cream
parmesan cheese, for topping

Steps:

  • The packet of crushed red pepper I used was from Pizza Hut, it was available & easy so I just added that. You can substitute about 1 tbsp crushed red pepper if you don't have one laying around --
  • Prepare pasta according to package directions & drain. While pasta is cooking, heat butter & olive oil, add Kielbasa, crushed pepper & red bell pepper, sautee' until kielbasa is browned.
  • In pasta pot add drained pasta, kielbasa mixture, pasta sauce & sour cream. Heat through, serve & top with parmesan to taste. You can omit the parmesan if you like, it's still very tasty!

Tips:

  • For a creamier dip, use full-fat cream cheese and sour cream.
  • If you like things spicy, add an extra 1/4 teaspoon of cayenne pepper.
  • Serve the dip with crackers, chips, or vegetables.
  • For a party, double or triple the recipe.
  • If you don't have brown sugar, you can use granulated sugar instead.
