JALAPENO POTATOES

Wonderful cheesy flavor with a slight kick from the jalapenos. The pimiento and jalapenos add a nice color contrast to the pale orange sauce. Use your discretion with the amount of jalapenos. You can also sub 1/8 to 1/4 cup chopped hot mixed peppers. It's best to use a waxy-type potato so they will keep their shape.

Tips:

  • For a smoother texture, use a food processor to grate the potatoes.
  • If you don't have a food processor, use a box grater with the large holes.
  • Be sure to squeeze out as much excess moisture from the potatoes as possible before adding them to the other ingredients.
  • Use a large skillet or griddle to cook the potato patties. This will help them cook evenly.
  • Don't overcrowd the skillet or griddle. Cook the potato patties in batches if necessary.
  • Cook the potato patties over medium heat. This will help them cook through without burning.
  • Flip the potato patties once during cooking. This will ensure that they cook evenly on both sides.
  • Serve the potato patties immediately with your favorite dipping sauce.
