SPICY GARLIC HUMMUS

Spicy Garlic Hummus image

I have tried a lot of hummus recipes, and this one is a combination of a few of my favorites, and is now the only one I use. I grow my own little Super Hot Chili Peppers and so that is what I use, but you can substitute any pepper you like, or use hot pepper flakes. I like a lot of garlic and a bit of a kick, but this recipe is easily alterable to your own tastes so adjust it as you see fit. I like my hummus thick so I usually skip the water. Another nice variation is to add a bit of red, green, and yellow bell peppers. It makes the hummus really pretty! Any hummus lover will tell you that the spread can be used so many ways. My favorite uses for this is as a vegetable dip or as a sandwich spread in a whole wheat veggie wrap. Yum!

3 cups cooked chickpeas, from dried, or canned, drained and rinsed
6 cloves roasted garlic
2 teaspoons cayenne pepper
2 tablespoons lemon juice
1 tablespoon honey
3 tablespoons tahini
1/2 cup olive oil
Salt and freshly ground black pepper
1/2 Pizza Dough, rolled into 2 (10-inch) rounds, recipe follows
Canola oil
2 grilled red peppers, cut into strips
6 grilled scallions, thinly sliced
1 Japanese eggplant, cut in 1/2 and grilled
1 zucchini, cut in half and grilled
Salt and freshly ground black pepper
1 tablespoon ancho powder
1/2 cup crumbled goat cheese
1/4 cup chopped black kalamata olives
1/4 cup freshly chopped basil leaves
2/3 cup lukewarm water (105 degrees F to 115 degrees F)
2 1/2 teaspoons active dry yeast
1/2 teaspoon sugar
2 tablespoons olive oil, plus additional for oiling bowl
1 3/4 to 2 cups all-purpose unbleached flour
1/4 cup finely ground yellow cornmeal
2 teaspoons coarse salt

Steps:

  • For the hummus:
  • Place chickpeas, garlic, cayenne pepper, lemon juice, honey and tahini in the bowl of a food processor and process until smooth. With the machine running, slowly add the olive oil until emulsified. Season with salt and pepper, to taste.
  • For the pizza:
  • Heat the grill to high. Brush both sides of the pizzas with oil and season with salt and pepper. Grill until golden brown on both sides, about 2 minutes per side.
  • Top each pizza with the spicy hummus. Arrange any or all of the veggies on top of the hummus and top with the goat cheese. Season with salt, pepper and ancho powder. Place the bread back on the grill, close the cover and grill for 5 minutes to heat through. Remove and add black olives and fresh basil.
  • In a large bowl stir together 1/3 cup water, yeast, and sugar and let stand until foamy, about 10 minutes. Stir in remaining 1/3 cup water, 2 tablespoons oil, 1 3/4 cups flour, cornmeal, and salt and blend until the mixture forms a dough. Knead dough on a floured surface, incorporating as much of remaining 1/4 cup flour, as necessary, to prevent dough from sticking, until smooth about 5 to 10 minutes. Form the dough into a ball.
  • Lightly oil the sides and bottom of a large bowl with oil, add the dough, turn to coat in the oil, cover and let rise in a warm place until doubled in size, about 1 hour. Gently punch the dough down and divide into 4 equal pieces. Roll each piece on a lightly floured surface into a 10-inch circle that is 1/8-inch thick. Brush off excess flour and transfer the dough to a baking sheet, cover each circle of dough with plastic wrap and continue stacking rolled out pieces on top of each other. Wrap well with plastic wrap and refrigerate until ready to grill.

SPICY HUMMUS: QUICK CHICKPEA SPREAD (RACHEL RAY)

Spicy Hummus: Quick Chickpea Spread (Rachel Ray) image

This got many rave reviews on the other site. However, most said it was too thick. So some added about half the liquid from the canned chick peas, a little more olive oil and more lemon juice. I think some roasted red pepper would be good. Good basic recipe that you can adjust to taste, for our tastes I will most likely add more of the seasonings, and add a dash of cayenne too. SPICY BLACK BEAN HUMMUS

Spicy Black Bean Hummus image

A Latin American twist on the classic Mediterranean snack. I never buy store-bought hummus anymore, as this homemade version I makes tastes so much better! The amount of servings really depends on what you'll be using this for- I use it as a dip with crackers, a spread on pita sandwiches, and I even stuff it into chicken breasts. The hummus also seems to keep for as long as week in the fridge.

Tips:

  • For a creamier hummus, use canned chickpeas instead of dried chickpeas. Canned chickpeas are already cooked and do not require soaking or boiling.
  • To make the hummus spicier, add more chili powder or cayenne pepper. You can also add a finely chopped jalapeño pepper for an extra kick.
  • If you don't have tahini, you can use a combination of olive oil and lemon juice. Use 1 tablespoon of olive oil and 2 tablespoons of lemon juice for every 1/4 cup of tahini that the recipe calls for.
  • To make the hummus more flavorful, roast the chickpeas before using them. Toss the chickpeas with olive oil, salt, and pepper, then roast them at 400 degrees Fahrenheit for 20-30 minutes, or until they are crispy.
  • For a smooth hummus, make sure to blend it until it is completely smooth. You can use a food processor or a high-powered blender.

Conclusion:

Spicy hummus is a delicious and versatile dip that can be enjoyed as an appetizer, snack, or spread. It is easy to make and can be customized to your own taste preferences. Whether you like it mild or spicy, creamy or chunky, there is a spicy hummus recipe out there for everyone. So next time you are looking for a healthy and flavorful snack, give spicy hummus a try.
