SPICY HONEY-GLAZED HAM

Spicy Honey-Glazed Ham image

Provided by Food Network Kitchen

Categories     main-dish

Time 4h

Yield 8 to 10 servings

Number Of Ingredients 11

1 8-pound fully cooked bone-in half ham (shank or butt)
1 cup low-sodium chicken broth
1 cup honey
3/4 cup packed light brown sugar
1/2 cup dijon mustard
1/2 cup whole-grain mustard
3 tablespoons apple cider vinegar
3 tablespoons hot sauce
1 tablespoon chopped fresh thyme
1/2 teaspoon red pepper flakes
Bring the ham to room temperature 1 hour before baking.

Steps:

  • Position an oven rack in the lowest position; preheat to 350 degrees F. Trim off any skin from the ham, leaving a 1/4-inch layer of fat. Score the fat with a sharp knife in a 1-inch crosshatch pattern without cutting through to the meat. Place the ham flat-side down in a roasting pan and add the chicken broth to the pan. Cover with foil and bake 1 1/2 hours.
  • Meanwhile, make the glaze: Whisk the honey, brown sugar, mustards, vinegar, hot sauce, thyme and red pepper flakes in a medium bowl. Remove 3/4 cup of the glaze to a separate bowl and set aside for serving. Remove the ham from the oven, discard the foil and brush with about one-quarter of the remaining glaze. Continue baking, brushing with the glaze and the pan juices every 30 minutes, until the ham is a deep reddish-brown and a thermometer inserted into the center registers 140 degrees F, 1 to 1 1/2 more hours. (Add 1/2 cup water to the pan if the juices dry out.)
  • Transfer the ham to a cutting board and let rest 20 minutes before slicing. Serve with the reserved glaze.

SPICY HAM SLICE/STEAK

Spicy Ham Slice/Steak image

I'm not a big ham fan but I just LOVE this dish. Easy to do, very forgiving - you can substitute different kinds of juice or soda. Ham steaks freeze well and thaw fast so it's good for a week night. Fairly economical if you get the ham on sale. I love to have it with orange rice where I substitute about a half a cup of OJ for water with plain old white or even brown rice, and a nice green salad. Enjoy!

Categories     Ham

Time 1h

Yield 2-3 serving(s)

Number Of Ingredients 9

1 slice ham steak
1/2 cup orange juice (apricot or pineapple work well, too, so does Tang!)
1/2 cup ginger ale (or Sprite, 7-Up or a cola drink)
1/2 cup packed brown sugar (I usually use light)
1 teaspoon dry mustard
1 teaspoon red wine vinegar
1 tablespoon oil
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger

Steps:

  • Prick ham slice with a fork all over to make holes and slash the edges so it won't curl during baking.
  • Place in baking dish just big enough to hold slice.
  • Mix all other ingredients together well and pour over ham.
  • Marinate at least 30 minutes but can be longer (some times I do it in a baggie overnight).
  • Put in 350* oven, bake for about 30 minutes. Mmmm!

SPICY MAPLE-GLAZED SPIRAL HAM

Spicy Maple-Glazed Spiral Ham image

You just know a spiral ham is going to taste awesome, no matter how you cook it. But lacquer it up with maple syrup, apple juice, espresso, Worcestershire sauce, and Korean chili paste, and it becomes the kind of flavor bomb that will utterly transform your holiday experience.

Provided by Edward Lee

Categories     main-dish

Time 1h45m

Yield 10 servings

Number Of Ingredients 8

1/2 cup gochujang, Korean fermented chili paste
1/2 cup apple juice
1/4 cup maple syrup
1 teaspoon Worcestershire sauce
1/4 cup espresso or strong coffee
7 pounds cooked bone-in spiral ham
Leaves from ½ bunch purple kale or cabbage
1/2 cup pomegranate seeds

Steps:

  • Preheat oven to 380 degrees F. Whisk gochujang, apple juice, maple syrup, Worcestershire sauce, and espresso in a small bowl.
  • Place ham onto a rack fitted over a sheet pan. Generously brush the glaze all over the ham with a pastry or silicone brush. The glaze will seep into the ham, giving it a burnished finish throughout. Bake 1-1½ hours, depending on the size of your ham, basting every 15 minutes.
  • After 15 minutes, for the first basting, the spiral cuts will begin to brown and separate. Baste all over, then place back in the oven. The ham will be basted 5-6 times in total, for a bubbly, burnished finish.
  • Remove ham from oven and pull away the outermost layer from the cut side (this slice will be dried out). Let rest while preparing the garnish. Lay kale or cabbage leaves onto a platter, then sprinkle with pomegranate seeds. Gently place the ham on the leaves and serve.

Tips:

  • Choosing the Right Ham Slice Steak: Select ham slice steaks that are at least 1 inch thick for optimal grilling results.
  • Tenderizing the Ham: To tenderize the ham and enhance its flavor, consider using a meat tenderizer or marinating it for a few hours before cooking.
  • Flavorful Seasonings: Experiment with different seasonings to create a unique flavor profile for your ham slice steaks. Options include garlic powder, onion powder, paprika, cumin, chili powder, and cayenne pepper.
  • Grilling Techniques: Grill the ham slice steaks over medium-high heat to achieve a nice sear on the outside while keeping the inside juicy and tender. Use a meat thermometer to ensure proper cooking.
  • Glazing the Ham: Elevate the flavor of your ham slice steaks by brushing them with a glaze during the last few minutes of grilling. Popular glaze options include honey, maple syrup, brown sugar, and Dijon mustard.
  • Resting the Ham: Allow the grilled ham slice steaks to rest for a few minutes before slicing and serving. This helps the juices redistribute throughout the meat, resulting in a more tender and flavorful experience.

Conclusion:

Spicy ham slice steak is a versatile and flavorful dish that can be enjoyed for breakfast, lunch, or dinner. With the right ingredients and cooking techniques, you can create a delicious and satisfying meal that the whole family will love. Experiment with different seasonings and glazes to find your preferred flavor combination, and don't forget to let the ham rest before slicing to ensure optimal tenderness.
