Categories     Dinner     Entree

Time 35m

Yield 4

Number Of Ingredients 10

8 ounces pasta (e.g., penne , elbows, shells)
3 cups broccoli florets, roughly chopped (about 1 medium broccoli crown)
3 tablespoons unsalted butter
1 1/2 to 2 cups diced ham (about 8 ounces)
1 large clove garlic, finely minced
2 to 3 teaspoons chopped fresh basil, or 1/2 teaspoon dried leaf basil
3/4 cup heavy cream
3/4 cup freshly grated Parmigiano-Reggiano cheese
Salt, to taste, optional
Freshly ground black pepper, to taste, optional

Steps:

  • Cook the pasta in a pot of boiling salted water following the package directions. Drain in a colander.
  • Meanwhile, put the broccoli pieces in a steaming basket. Bring about an inch of water to a boil in a medium to large saucepan. Put the steaming basket in the pan (above the water, so the broccoli doesn't sit in the water). Cover the pan and steam the broccoli for about 4 minutes, or until the florets are just barely tender.
  • In a skillet or saute pan over medium heat, melt the butter. Add the ham and cook, stirring, until browned. Add the garlic and cook for 1 more minute. Add the basil, cream, and Parmesan cheese. Bring to a simmer over low heat and continue cooking for about 1 minute.
  • Taste and add salt and pepper, as needed. Combine with the drained pasta and toss. Heat through.
  • Transfer the pasta mixture to a serving bowl and toss again at the table just before serving.
  • Serve with extra Parmesan cheese, a tossed salad or Caesar salad, along with crusty rolls or bread . Variations

SHEET-PAN SPICY ROASTED BROCCOLI PASTA

Sheet-Pan Spicy Roasted Broccoli Pasta image

Think of this as the sheet-pan version of a classic, cheese-covered pasta bake. It has all the elements of the usual casserole - the pasta and vegetables tossed with ricotta and topped with Parmesan-dusted bread crumbs. But because all the ingredients are spread out on a sheet pan instead of being piled into a baking dish, everything browns, which in turn means more crunch and crisp edges. First, the broccoli is roasted until it softens and browns. Then, the other ingredients are spooned on top, and everything is quickly baked, making for a speedy, vegetarian weeknight meal. It's worth seeking out really good ricotta here. With so few ingredients, every one makes a difference.

Tips:

  • Choose the right pasta: Short pastas like penne, macaroni, or rotini work best for this recipe because they can hold the sauce well. Whole wheat or lentil pasta can be used for a healthier option.
  • Use good quality ham: Look for a ham that is fully cooked and has a good smoky flavor. Black Forest ham or honey ham are both good choices.
  • Don't overcook the broccoli: Broccoli should be cooked until it is tender-crisp, but still has a bit of a bite to it. Overcooked broccoli will become mushy and lose its flavor.
  • Make sure the sauce is creamy: The sauce should be thick enough to coat the pasta and broccoli, but not so thick that it is clumpy. If the sauce is too thick, add a little milk or cream to thin it out.
  • Season to taste: Be sure to taste the pasta before serving and adjust the seasonings as needed. Add more salt, pepper, red pepper flakes, or Parmesan cheese to taste.

Conclusion:

This spicy ham n' broccoli pasta is a quick and easy weeknight meal that is sure to please the whole family. It is packed with flavor from the ham, broccoli, and spicy sauce. The pasta is also very creamy and comforting. This dish can be easily customized to your liking by adding different vegetables, cheeses, or spices. So get creative and enjoy!
