"This is one of my favorite ways to serve fish," says Kathleen Plake of Fort Wayne, Indiana. "I'm originally from Louisiana, where much of the food is spicy. So I like the spark that the chili powder and green chilies give this good-for-you baked fillets."

Tips:

  • Select fresh haddock: Look for haddock that is firm to the touch, with bright, clear eyes and a mild, briny smell.
  • Properly season the haddock: Use a combination of salt, pepper, and other spices, such as paprika, garlic powder, or onion powder, to enhance the flavor of the fish.
  • Use a light coating: Avoid over-coating the haddock, as this can make it soggy. A light coating of flour or bread crumbs will help the fish to cook evenly and stay crispy.
  • Cook the haddock at the right temperature: Haddock is a delicate fish, so it is important to cook it at a moderate temperature to prevent it from overcooking and becoming dry. A temperature of 350 degrees Fahrenheit is ideal.
  • Serve the haddock immediately: Haddock is best served immediately after cooking, while it is still hot and crispy. You can serve it with a variety of sides, such as roasted vegetables, mashed potatoes, or rice.
