Time 30m

Number Of Ingredients 4

2 eggplants
1/4 c olive oil
1 lime
1 Tbsp cajun seasoning

Steps:

  • 1. Brush eggplant slices with oil on both sides. Drizzle with lime juice; sprinkle with Cajun seasoning. Let stand for 5 minutes.
  • 2. Grill eggplant, covered, overhigh heat or broil 4 in. from the heat for 4-5 minutes on each side or until tender.

Tips:

  • Choose the Right Eggplant: Select firm and glossy eggplants with smooth, unblemished skin. Avoid eggplants with blemishes or bruises.
  • Prepare the Eggplant Properly: Cut the eggplant into uniform slices or cubes to ensure even cooking. Salting the eggplant before grilling helps draw out excess moisture and reduce bitterness.
  • Use High Heat: Grilling the eggplant over high heat creates a delicious smoky flavor and caramelizes the natural sugars for a sweet and savory taste.
  • Don't Overcook the Eggplant: Keep a close eye on the eggplant while grilling to prevent it from becoming too soft or mushy. It should have a slight char and still retain a bit of firmness.
  • Experiment with Different Marinades and Spices: Feel free to customize the flavor of your grilled eggplant by using different marinades or spice rubs. Experiment with herbs, spices, and citrus to create unique flavor combinations.
  • Serve with Complementary Sides: Grilled eggplant pairs well with a variety of sides, such as grilled vegetables, quinoa, or couscous. Consider adding a refreshing sauce or dressing to enhance the flavors.

Conclusion:

Grilled eggplant is a versatile and flavorful dish that can be enjoyed as a main course or as a side dish. With its smoky, savory, and slightly sweet taste, grilled eggplant is sure to impress your taste buds. Whether you prefer a simple grilled eggplant with a drizzle of olive oil or a more elaborate dish with a flavorful marinade, there are endless possibilities to explore.
