Time 55m

Number Of Ingredients 8

1/2 cup honey
1/3 cup soy sauce (see notes below)
4 garlic cloves (minced)
1 tablespoon ginger (finely diced)
1/4 cup water
2 pounds chicken wings (tips removed, and drumettes separated (24-26 chicken wings))
1 tablespoon avocado oil
salt and pepper (to taste)

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Use a paper towel to remove any moisture from the chicken wings.
  • Toss the wings with the oil, salt, and pepper.
  • Place a piece of parchment paper on a baking sheet then place a wire rack on top. Spread out the wings on a single layer on the baking sheet.
  • Bake for 40-45 minutes until crispy.
  • While the wings are cooking, make the sauce. Add the honey, soy sauce, garlic, ginger, and water to a small pot. Bring it to a boil and reduce the heat to low letting it simmer for 10 minutes - or until slightly reduced and thickened.
  • Remove the sauce from the heat and let it cool. It will continue to thicken as it cools.
  • Remove wings from the oven. Toss the wings in the sauce and place them back in the oven on the baking sheet and cook for an additional 10 minutes.

RIO'S SPICY CHICKEN WINGS

Rio's Spicy Chicken Wings image

Ganso, a Japanese restaurant in downtown Brooklyn, is justly known for its steaming bowls of fragrant ramen. But the fiery, crunchy chicken wings there are the stuff of dreams. This recipe, from the chef Rio Irie, hits all the right notes: spicy from chile paste and fresh ginger, salty from soy sauce, funky from fish sauce, sweet from mirin.

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 19

3 pounds chicken wings
1 large garlic clove, peeled and grated
1 1/2-inch piece fresh ginger, peeled and grated
2 tablespoons soy sauce
1 tablespoon olive oil
1 tablespoon nam pla or other Asian fish sauce
1/2 teaspoon mirin
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup mirin
2 tablespoons soy sauce
1 tablespoon nam pla or other Asian fish sauce
2 teaspoons red yuzu kosho (see note)
1/2 teaspoon black pepper
1 teaspoon grated garlic
1/2 teaspoon shichimi togarashi (optional)
1 teaspoon sesame seeds
Black pepper
1 tablespoon chopped scallions

Steps:

  • In a large bowl, mix together all marinade ingredients except chicken wings. Add the wings and toss to coat. Cover and let chicken marinate overnight in the refrigerator.
  • When ready to cook, combine all glaze ingredients in a small saucepan. Simmer over low heat, stirring frequently, until glaze reduces to a saucy consistency, about 20 minutes. Transfer to large mixing bowl and set aside.
  • Heat a broiler to high. Set a baking rack on top of a rimmed baking sheet and arrange wings on rack. Broil for 12 minutes, flipping wings halfway through, until they are crisp and golden.
  • Transfer wings to the bowl with the glaze and toss to coat. Transfer wings to a serving platter and garnish with sesame seeds, pepper and scallions. Serve hot.

HONEY-GINGER CHICKEN WINGS

Time 9h35m

Yield 4 to 6 servings

Number Of Ingredients 9

1/2 cup honey, preferably wildflower or mesquite
1/4 cup lime juice plus 1 tablespoon grated lime zest, plus more zest, for garnish
1/4 cup tamari or soy sauce
3 tablespoons sesame oil
2 tablespoons grated fresh ginger
3 cloves garlic, minced
2 scallions, thinly sliced (about 3 tablespoons)
Kosher salt and freshly ground black pepper
16 chicken wings (about 4 pounds), tips removed, drumettes and flats separated

Steps:

  • In a medium bowl, whisk together the honey, lime juice and zest, tamari, sesame oil, ginger, garlic, scallions, 1/4 teaspoon salt and 1/4 teaspoon pepper. Reserve 3/4 cup of the marinade for later use. Pour the remaining marinade into a 2-gallon ziptop bag. Add the chicken and seal the bag, pressing out as much air as possible; massage to distribute the marinade. Marinate, refrigerated, for at least 6 hours, preferably overnight.
  • Remove the chicken wings from the refrigerator and let sit at room temperature for about 30 minutes.
  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Put the wings skin-side down on the baking sheet and spoon the marinade from the bag over the wings. Cook for 20 minutes, then flip the wings, baste with the pan drippings, rotate the pan and cook until the honey has caramelized and the skin is a dark amber, an additional 20 to 25 minutes.
  • Pour the reserved 3/4 cup marinade into a small saucepan and bring to a boil over medium-high heat. Cook until the liquid is thick and syrupy and turns into a glaze, about 4 minutes. Coat the wings with the thickened marinade. Transfer to a serving platter and garnish with lime zest.

SPICY LACQUERED CHICKEN WINGS

Spicy Lacquered Chicken Wings image

Here is a remarkably sophisticated though dead simple take on classic dude food: chicken wings that work just as well in front of a football game on the television as at a Chinese New Year party. They are sweet, spicy, sticky, fragrant and full-flavored, and they have a fine, shiny lacquered coat. Top with a scallion and cucumber relish spiked with roasted peanuts, sesame oil and hot red peppers. A bed of sliced juicy navel oranges can serve as a foil to the spicy heat.

Categories     appetizer

Time 1h

Yield 4 to 6 servings (18 to 20 wings)

Number Of Ingredients 17

3 pounds meaty chicken wings, tips removed
Salt
3 tablespoons soy sauce
3 tablespoons rice wine or sherry
3 tablespoons brown sugar
1 tablespoon grated ginger
6 garlic cloves, minced
1/2 teaspoon five-spice powder
1/4 teaspoon cayenne pepper
1/2 teaspoon grated orange zest
1 small cucumber, diced (about 1 cup)
6 scallions, slivered
2 or 3 small hot red chiles, very thinly sliced (or hot green chiles), optional
2 tablespoons crushed roasted peanuts
1 teaspoon sesame oil
1 handful cilantro leaves
2 navel oranges, sliced

Steps:

  • Rinse the wings, pat dry, season lightly with salt and put them in a large bowl. In a separate bowl, whisk together the soy sauce, rice wine, brown sugar, ginger, garlic, five-spice powder, cayenne and orange zest, then pour over the wings and massage well. Let marinate for 1 hour at room temperature or refrigerate (overnight is fine) and bring to room temperature.
  • Preheat the oven to 375 degrees. Arrange the wings in one layer in a low-sided baking dish or roasting pan (or use 2 pans) and place on middle shelf. Every 8 to 10 minutes, brush the wings with the marinade from the pan, adding 3 or 4 tablespoons water to dissolve the juices as necessary. Continue until well browned, glazed and cooked through, about 40 to 45 minutes. The wings may be cooked ahead and reheated if desired.
  • Pile the wings on a warm platter. Quickly assemble the garnish. In a small bowl combine the cucumber, scallions, chiles, crushed peanuts and sesame oil. Season with salt, toss lightly and scatter over the wings. Sprinkle with the cilantro. Surround with orange slices and serve.

Tips:

  • To make sure the wings are evenly coated in the marinade, use a large bowl and toss the wings in the marinade until they are completely covered.
  • If you don't have a grill, you can also bake the wings in the oven at 400 degrees Fahrenheit for 20-25 minutes, or until they are cooked through.
  • For a spicier flavor, use a hotter pepper sauce or add a pinch of cayenne pepper to the marinade.
  • If you like your wings extra crispy, cook them for a few minutes longer, or until the skin is browned and crispy.
  • Serve the wings with your favorite dipping sauce, such as blue cheese dressing, ranch dressing, or honey mustard.

Conclusion:

These spicy ginger chicken wings are the perfect party food or game day snack. They are easy to make and always a hit with a crowd. The wings are marinated in a flavorful mixture of soy sauce, ginger, garlic, and hot pepper sauce, then grilled to perfection. The result is a wing that is crispy on the outside and tender and juicy on the inside. So next time you are looking for a delicious and easy appetizer, give these spicy ginger chicken wings a try. You won't be disappointed!
