2 teaspoons sugar
1/2 teaspoon each cornstarch and ground ginger
1/4 teaspoon pepper
1/4 teaspoon crushed red pepper flakes
2 tablespoons sherry or beef broth
2 tablespoons reduced-sodium soy sauce
1 tablespoon barbecue sauce
1 teaspoon sesame oil
1-1/2 cups julienned carrots
1/2 cup sliced onion
2 teaspoons canola oil
12 ounces boneless beef top round steak, cut into thin strips
2 garlic cloves, minced
1/4 cup sliced green onion
Hot cooked rice, optional

Steps:

  • In a bowl, combine the sugar, cornstarch, ginger, pepper and red pepper flakes. Stir in the sherry or broth, soy sauce, barbecue sauce and sesame oil; set aside. In a large nonstick skillet or wok, stir-fry carrots and onion in hot canola oil until crisp-tender; remove and set aside. In the same pan, stir-fry beef and garlic until meat is no longer pink. Stir sauce mixture; stir into pan. Add carrot mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Garnish with green onions. Serve over rice if desired.

1 beef flank steak (1-1/2 pounds)
1 cup rice vinegar
1 cup soy sauce
1/4 cup packed brown sugar
2 tablespoons minced fresh gingerroot
6 garlic cloves, minced
3 teaspoons sesame oil
2 teaspoons Sriracha chili sauce or 1 teaspoon hot pepper sauce
1/2 teaspoon cornstarch
Optional: Sesame seeds and thinly sliced green onions

Steps:

  • Cut beef into 1/4-in.-thick strips. In a large bowl, whisk the first 7 ingredients until blended. Pour 1 cup marinade into a shallow dish. Add beef; turn to coat. Refrigerate, covered, 2-8 hours. Cover and refrigerate remaining marinade., Preheat air fryer to 400°. Drain beef, discarding marinade in dish. Thread beef onto 12 metal or soaked wooden skewers that fit into air fryer. In batches if necessary, arrange skewers in a single layer on greased tray in air-fryer basket. Cook until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 4-5 minutes, turning occasionally and basting frequently using 1/2 cup of reserved marinade. , Meanwhile, to make glaze, bring remaining marinade (about 3/4 cup) to a boil; whisk in 1/2 teaspoon cornstarch. Cook, whisking constantly until thickened, 1-2 minutes. Brush skewers with glaze just before serving. If desired, top with sesame seeds and sliced green onions.

2 tablespoons oil
1 lb sirloin steaks, tips thinly sliced or 1 lb skirt steak, thinly sliced
2 tablespoons fresh grated gingerroot, divided

1 tablespoon red curry paste (we used A Taste of Thai)
1 large onion, sliced (about 2 cups)
2 sliced red bell peppers (about 2 cups, we used a combination of both) or 2 sliced orange bell peppers (about 2 cups, we used a combination of both)
3 tablespoons sweet red chili sauce (we used A Touch of Thai)
2 tablespoons soy sauce
1/4 cup chopped fresh basil (we used the parsley) or 1/4 cup fresh parsley (we used the parsley)

Steps:

  • Heat oil in a large skillet over a high heat.
  • Add beef and one tablespoon of the ginger.
  • Salt to taste and stir-fry until meat is barely cooked.
  • With a slotted spoon, remove beef to a bowl, draining oil back into skillet.
  • Add curry paste and onion to oil.
  • Stirring, cook until curry is dissolved and fragrant.
  • Add peppers and remaining ginger.
  • Stir-fry until vegetables are tender crisp.
  • Add sweet red chili sauce and soy sauce to vegetables .
  • Stir to combine.
  • Pour reserved meat, with accumulated juices into skillet.
  • Cook until meat is just heated through.
  • Add basil or parsley and mix until combined.
  • Serve immediately.
  • Jasmine rice is a nice accompaniment with this entrée.
