1 cup flour
1 teaspoon garlic salt
1 teaspoon onion salt

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.

1 (10 ounce) fillet frozen catfish
1 teaspoon cayenne pepper, or to taste
½ cup corn flour
salt and pepper to taste
1 quart oil for frying

  • Lay catfish fillet horizontally on cutting board. Cut thin 1/4 inch wide strips from the filet at a 45 degree angle. This is easy if your knife is sharp, and the filet is partly frozen.
  • Dust fish strips moderately with cayenne pepper, and gently tumble together to evenly coat all strips. They should look pink all over when you are through. On the Bayou, this is called a dry marinade. Place catfish strips on a plate or pan, and set aside for a few minutes to thaw.
  • Heat oil in deep-fryer to 365 degrees F (185 degrees C). Place enough corn flour to bread your catfish on a bowl or plate, and season with salt and black pepper.

1 medium Spanish onion, diced

2 tablespoons finely chopped fresh cilantro

  • Bring a large pot of water to a boil, add 2 tablespoons of salt and the potatoes, bring to a boil and cook, until just tender, about 8 minutes. Drain well in a colander.
  • Heat 1 tablespoon of oil in a large cast iron skillet over medium heat until it begins to shimmer, add the onion and cook, stirring a few times, until soft and lightly golden brown, about 5 minutes. Remove the onions to a plate.
  • Add the remaining oil and the butter to the pan, increase the heat to high and heat until the butter has melted and the oil is sizzling. Add the potatoes and chile powder and season with salt and pepper and immediately press down into an even layer on the bottom on the pan, using a wide metal spatula. Turn the potatoes over, press down again and cook until the potatoes on the bottom are golden brown, about 5 minutes longer.   • Preheat oven to 450°F with rack in middle.
  • Peel parsnips and quarter lengthwise. (If large, cut lengthwise into eighths and cut out cores.) Toss with 1 tablespoon oil in a large shallow baking pan and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Roast, stirring occasionally, while preparing chicken (about 5 minutes).

  • Position racks in the upper and lower thirds of the oven and preheat to 450 degrees F. Line 2 rimmed baking sheets with foil, then divide the fries between them. Bake, tossing once or twice, until crisp and golden brown, 30 to 45 minutes. Transfer to a large bowl.

4 turnips, trimmed and peeled
2 tablespoons olive oil
1 teaspoon kosher salt

3 cups potatoes, cut up as french fries
2 tablespoons cornstarch
oil, the fries (for deep frying)
2 tablespoons fire-n-brimstone chili sauce (recipe id 41922)
1 small green pepper, finely sliced
2 spring onions, bulbs finely sliced,green portion cut into 1 " bits
2 tablespoons oil
3 teaspoons honey
3 teaspoons vinegar
1/4 teaspoon soya sauce
1/2 teaspoon salt

Steps:

  • Sprinkle cornstarch on the raw french fries.
  • Toss to coat.
  • Heat oil in a wok/frypan.
  • Fry the cornstarch coated french fries till nice and crisp.
  • Keep aside.
  • In a bowl, mix together the chilli sauce, honey, vinegar, soya sauce and salt.
  • Keep aside.
  • Reomve all, but 2 tblsps, of the oil from the wok/frypan and put it back on the burner.
  • Heat the oil.
  • Add spring onions and green pepper and cook them for barely 30 secs.
  • Pour in the chilli sauce mixture.
  • Give it a few turns and add the cornstarch coated french fries.
  • Toss to coat the fries with the sauce.
  • Remove from fire.
  • Serve immediately.
