Time 35m

Yield 24

Number Of Ingredients 8

12 eggs
1 ½ tablespoons Dijon mustard
1 ½ tablespoons mayonnaise
½ teaspoon Worcestershire sauce
½ teaspoon hot pepper sauce, or to taste
1 pinch salt and black pepper
¼ teaspoon ground paprika, for dusting (divided)
1 (6 ounce) can black olives, drained and cut in half horizontally

Steps:

  • Place eggs in a saucepan with a lid, pour in water to cover, bring to a boil, and remove from the heat. Cover and let stand for 10 to 12 minutes. Remove eggs from hot water and let cool. Peel the eggs.
  • Cut each egg in half lengthwise, remove the yolks, and place the yolks in a bowl with the mustard, mayonnaise, Worcestershire sauce, hot pepper sauce, and salt and pepper. Mash the yolks, and stir the mixture until smooth and thoroughly combined.
  • Fill each egg half with the deviled yolk mixture, using a spoon, piping bag, or a sturdy plastic bag with a corner cut off. Dust each egg with a pinch of paprika, and place an olive half, round side up, in the center of each. Refrigerate until chilled, 20 to 30 minutes, and serve cold.

Time 1h10m

Yield 4 servings

Number Of Ingredients 12

8 slices thick-cut bacon
8 large eggs
1/2 cup mayonnaise
1/4 cup finely chopped sweet onion
3 tablespoons sweet relish
1 tablespoon Dijon mustard
1/2 teaspoon paprika
1 celery stalk, very finely chopped
Kosher salt and freshly ground black pepper
12 slices white bread, lightly toasted
About 4 leaves green-leaf lettuce, torn in half
2 medium tomatoes, sliced

Steps:

  • Preheat the oven to 400 degrees F.
  • Line a rimmed baking sheet with foil and place a rack on top. Arrange the bacon on the rack in a single layer. Bake until browned and crisp, 20 to 25 minutes. Let cool, then break the bacon in half.
  • Meanwhile place the eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil over medium-high heat. Boil for about 30 seconds, then turn off the heat, cover the pan and let stand 20 minutes. Drain, add cold water and let stand in the cold water for 5 minutes. Drain, peel the eggs and chop.
  • Combine the eggs with the mayonnaise, onion, relish, Dijon, paprika, celery, 1/2 teaspoon salt and pepper to taste in a bowl. Stir, mashing the eggs slightly, until very well combined. Season with additional salt and pepper.
  • Lay out 4 slices of toast and top evenly with half of the egg salad, bacon, lettuce and tomato. Sprinkle the tomato with salt. Add another piece of toast to each and top with the remaining ingredients. Close the sandwiches with the last 4 pieces of toast. Use a sharp knife to trim the crusts from the sandwiches; cut in half diagonally.

Egg salad with a little kick! Adjust the chile powder to your liking - start with less if you're not an affirmed chilehead & then increase as desired. Let egg salad rest 30 to 45 minutes after making final pepper addition to let flavors meld.

  • For a creamier egg salad, use mayonnaise and sour cream instead of just mayonnaise.
  • To add a bit of heat, use a spicy brown mustard or a few drops of hot sauce.
  • For a more flavorful egg salad, add some chopped celery, onion, or pickles.
  • If you're making the egg salad ahead of time, store it in the refrigerator for up to 3 days.
  • Serve the egg salad on crackers, bread, or lettuce leaves.
