Yield Makes 4 servings

Number Of Ingredients 14

1 habanero, Scotch bonnet, or Thai chile, with seeds, stemmed
2 garlic cloves
2 scallions, thinly sliced, white and green parts divided
1 tablespoon soy sauce
1/4 cup olive oil
6 large skin-on, bone-in chicken thighs
Kosher salt
1 1/2 cups 1/4" cubes rhubarb
1 cup 1/4" cubes unpeeled seeded English hothouse cucumber
1/2 cup coarsely chopped fresh cilantro
1 tablespoon honey
1 tablespoon vegetable oil
1 teaspoon fresh lime juice
Freshly ground black pepper

Steps:

  • Preheat oven to 500°F. Line a baking sheet with foil. Pulse chile, garlic, and white parts of scallions in a food processor until finely chopped. With machine running, drizzle in soy sauce, then olive oil; process until emulsion forms. Transfer sauce to a bowl.
  • Place chicken thighs, skin side up, on a work surface and slash each crosswise at 3/4" intervals down to the bone. Season lightly with salt. Place on prepared baking sheet and brush with sauce. Bake until skin is crisp and an instant-read thermometer inserted into thickest part of thigh registers 165°F, 20-25 minutes. Broil on high for an additonal 2-3 minutes for crisper skin, if desired. Let rest for 5-10 minutes.
  • Meanwhile, toss rhubarb, next 5 ingredients, and green parts of scallions in a medium bowl to coat. Season to taste with salt and pepper and let stand for at least 10 minutes to allow flavors to meld.
  • Serve chicken with rhubarb salsa alongside.

Time 25m

Number Of Ingredients 10

2 tablespoons fresh lime juice (from 1 lime)
1 tablespoon honey
2 tablespoons vegetable oil
2 Kirby cucumbers, finely diced
1 cup finely diced fresh pineapple (about of a whole pineapple)
2 scallions, thinly sliced

Tips:

  • Choose the right cucumbers: For the best flavor and texture, use fresh, firm cucumbers that are free of blemishes. English cucumbers or Persian cucumbers are good choices, as they have fewer seeds and a milder flavor than other varieties.
  • Cut the cucumbers thinly: This will help them absorb the flavors of the other ingredients more easily. You can use a sharp knife or a mandoline to slice the cucumbers.
  • Use a variety of chili peppers: This will give your salsa a more complex flavor. Some good options include jalapeños, serranos, and habaneros. Be sure to remove the seeds from the peppers before chopping them, unless you want your salsa to be extra spicy.
  • Add some acidity: This will help to balance out the heat of the chili peppers. You can use lime juice, lemon juice, or vinegar. Apple cider vinegar is a good choice because it has a slightly sweet flavor that will complement the spicy and savory flavors of the salsa.
  • Let the flavors meld: Once you've mixed all of the ingredients together, let the salsa sit for at least 30 minutes before serving. This will allow the flavors to meld and develop.

Conclusion:

This spicy cucumber salsa is a refreshing and flavorful condiment that is perfect for summer gatherings. It is easy to make and can be tailored to your own spice level. Serve it with chips, tacos, burritos, or grilled meats. Enjoy!
