2 teaspoons kosher salt
1/2 cup rice vinegar
1/2 cup water
3 tablespoons sugar
1/4 teaspoon crushed red pepper flakes
2 tablespoons minced red onions
1 tablespoon chopped dry roasted peanuts

Steps:

  • Place the cucumber slices in a colander; sprinkle with salt. Toss well. Drain 1 hour.
  • Place cucumber slices on several layers of paper towels; cover with additional paper towels. Let stand 5 minutes, pressing down occasionally. Rinse and pat dry.

4 cloves garlic, minced
3 tablespoons white vinegar
1 teaspoon white sugar, or to taste
1 tablespoon Asian-style chili-garlic sauce
1 tablespoon fish sauce

½ teaspoon red pepper flakes
2 cucumbers - halved lengthwise, seeds scraped out with a spoon, and thinly sliced
½ cup chopped peanuts
2 green onions, chopped

2 English cucumbers
1/2 medium red onion, chopped
1 -2 jalapeno pepper, seeded and chopped
3 tablespoons fresh lime juice
1 tablespoon soy sauce
1 tablespoon sesame oil
1/4 cup chopped unsalted dry roasted peanuts, for garnish (optional)

Steps:

  • Cut cucumbers in half lengthwise and remove seeds.
