I've never found a recipe for crispy ginger beef like the ones in the restaurants. I have experimented, and found something pretty close. Serve with rice and some steamed veggies.

¼ cup cornstarch
¼ tablespoon salt
black pepper
12 ounces flank steak, thinly sliced
1 quart oil for frying
4 tablespoons soy sauce
1 tablespoon rice vinegar
½ tablespoon rice wine
1 ½ tablespoons honey
7 tablespoons granulated sugar
½ tablespoon chile paste
¼ cup water
3 tablespoons chopped fresh ginger root
1 tablespoon vegetable oil
2 cloves garlic, chopped
¼ cup sliced onion
¼ cup diced red bell pepper

Steps:

  • Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  • Meanwhile, in a mixing bowl, combine cornstarch, salt and pepper together. Mix thoroughly. Toss the steak slices in the cornstarch mixture and coat well.
  • Deep fry the coated steak slices until golden brown. Check to make sure they are cooked through. Remove from oil, and set aside.

Beef Essentials: Crispy, Spicy Beef image

This is an easy/peasy way to make crispy beef, and after the marinating, it can be ready in a matter of minutes. The sriracha, and tamari blend perfectly with the coconut sugar, garlic, and ginger to produce a amazing depth of flavor. I will be trying this marinade on some chicken breasts tomorrow. So, you ready... Let's get...

PLAN/PURCHASE
1 lb beef roast, thinly sliced
1/4 c pineapple juice
2 Tbsp tamari sauce
2 Tbsp coconut sugar
1 Tbsp toasted sesame seed oil
1 Tbsp sriracha
1 Tbsp chili sauce
1 clove garlic, minced
1 tsp ground ginger
ADDITIONAL ITEMS
rice, for serving
toasted sesame seeds, for garmish

Steps:

  • 1. PREP/PREPARE
  • 2. I am using a beef bottom round for this recipe, but you could always try different cuts.
  • 3. To get a good sear on the steak, use a good heavy-bottomed pan, or Plancha grill (iron griddle). Cast iron is excellent for this recipe.
  • 4. Gather your ingredients (mise en place).
  • 5. Thinly slice the beef against the grain.
  • 6. Chef's Tip: If you place the beef in the freezer for about 30 minutes, it will firm it up, and make slicing easier.
  • 7. Using a bowl or Ziploc bag, mix the reminder of the ingredients together, and then toss in the beef.
  • 8. Place in the refrigerator for 1 - 2 hours.
  • 9. Heat up your pan or Plancha grill to high heat. Lay the beef in the pan or grill, in a single layer, and allow to cook until beginning to crisp, about 1 - 2 minutes per side.
  • 10. Chef's Tip: Do not crowd the beef, or it will steam, not crisp.
  • 11. PLATE/PRESENT
  • 12. My favorite way to serve this is in a bowl with some long-grained white rice, and sautéed carrots. Enjoy.
  • 13. Keep the faith, and keep cooking.

Tips:

  • Choosing the Right Beef: Select flank steak or skirt steak for a tender and flavorful result.
  • Tenderizing the Beef: Use a meat mallet or fork to tenderize the beef, breaking down the muscle fibers.
  • Marinating the Beef: Marinate the beef for at least 30 minutes in a mixture of soy sauce, rice wine, garlic, and ginger to enhance its flavor.
  • Coating the Beef: Coat the beef in a mixture of cornstarch and baking soda to create a crispy crust.
  • Frying the Beef: Heat the oil to a high temperature and fry the beef in batches to avoid overcrowding the pan.
  • Stir-Frying the Vegetables: Stir-fry the vegetables over high heat to retain their crispness and vibrant colors.
  • Combining the Beef and Vegetables: Combine the crispy beef and stir-fried vegetables in a wok or large pan, tossing to evenly distribute the flavors.
  • Garnishing and Serving: Garnish the dish with green onions and sesame seeds before serving.

Conclusion:

This Spicy Crispy Beef recipe delivers an explosion of flavors and textures, combining the tenderness of the beef, the crispiness of the coating, and the vibrant colors of the vegetables. The marinade and stir-frying techniques ensure that the beef remains succulent and juicy, while the high-heat frying creates a delightful crispy crust. The combination of spicy and savory flavors, along with the aromatic vegetables, makes this dish a perfect choice for a satisfying meal. Whether served as an appetizer, main course, or part of a larger spread, this Spicy Crispy Beef is sure to impress and tantalize taste buds.
