CREOLE-STYLE CHILI

Creole-Style Chili image

Slow Cooker Recipe. This recipe was clipped out of a magazine adapted from Brett Favre's Family Chili recipe in Green Bay Packers Cookbook. I changed up a bit for us and will note my changes. My husband liked it because it was spicy and was not overload on the beans. Enjoy

Time 7h20m

Yield 8 serving(s)

Number Of Ingredients 16

1 1/2 lbs lean ground beef (I used 1 1/3 pound ground beef and 1/2 pound sausage)
2 medium green peppers, chopped
2 stalks celery, chopped
1/2 cup green onion, sliced
1 small onion, chopped
2 garlic cloves, minced (I doubled)
1 (15 ounce) can kidney beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (14 1/2 ounce) can diced tomatoes with garlic, undrained
1 (10 ounce) can diced tomatoes with green chilies, undrained
1 (10 3/4 ounce) can cream of mushroom soup
1 3/4 ounces chili seasoning mix (I used Texas Red)
1 tablespoon chili powder
1/2 teaspoon creole seasoning
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • In a large skillet, cook beef (& sausage if added) until no longer pink; drain off fat.
  • In a slow cooker stir together meat with all listed ingredients.
  • Cover and cook on low heat for 7 to 8 hours.

Tips:

  • Use a variety of beans. This will give your chili a more complex flavor and texture. Good choices include black beans, kidney beans, pinto beans, and Great Northern beans.
  • Don't skimp on the spices. Chili is a spicy dish, so don't be afraid to add a generous amount of chili powder, cumin, and paprika. You can also add other spices, such as garlic powder, onion powder, and cayenne pepper, to taste.
  • Use fresh ingredients whenever possible. This will give your chili the best flavor. If you can, use fresh tomatoes, onions, and peppers. You can also use canned or frozen ingredients, but they will not be as flavorful.
  • Cook your chili low and slow. This will allow the flavors to meld and develop. Simmer your chili for at least 2 hours, or even longer if you have the time.
  • Serve your chili with your favorite toppings. Some popular toppings include shredded cheese, sour cream, guacamole, and diced onions.

Conclusion:

Spicy Creole chili is a delicious and versatile dish that can be enjoyed by people of all ages. It is a great way to use up leftover beans and vegetables, and it can also be made ahead of time and frozen. Whether you serve it with rice, cornbread, or by itself, spicy Creole chili is sure to be a hit.
