BAKED APPLES WITH SPICED CRANBERRY RELISH
Steps:
- Preheat the oven to 400 degrees F.
- In a small saucepan, heat the orange and lemon juices with 1/2 cup of the port. Add the zest and cook until tender, about 10 minutes. Reserve.
- In a medium saucepan, combine the cranberries, onion, 2 cups port, ginger, brown sugar, salt, pepper, and cinnamon. Over medium-high heat, cook until the relish thickens, 15 to 20 minutes, stirring occasionally. Stir in the remaining 1/2 cup port, the orange liqueur, and the reserved orange and lemon juice and zest mixture. Set aside.
- Cut off the top 1/4-inch of each apple. Using a melon baller, remove the core of the apple, being careful not to pierce the sides or bottom of the apples, to make apple "cups". Place the apple cups in a small baking dish. Spoon the cranberry relish into the apples. Spoon the excess relish around the apples. Cover with foil and bake until apples are tender, about 30 to 45 minutes.

Steps:
- Finely grate 1 teaspoon zest from lime, then squeeze enough juice to measure 2 tablespoons.
- Pulse cranberries with zest, juice, onion, sugar, and chile to taste in a food processor until finely chopped. Chill relish, covered, stirring occasionally, at least 2 hours (to allow flavors to develop) and up to 1 week.
Tips:
- Use fresh, ripe cranberries and apples. This will ensure the best flavor and texture for your relish.
- Chop the cranberries and apples into small pieces. This will help them to cook evenly and distribute their flavor throughout the relish.
- Use a variety of spices. This will give your relish a complex and interesting flavor. Some good choices include cinnamon, nutmeg, cloves, and allspice.
- Don't overcook the relish. It should be cooked until the cranberries and apples are softened, but they should still retain some of their shape.
- Let the relish cool completely before serving. This will allow the flavors to meld and develop.
Conclusion:
Spicy Cranberry Apple Relish is a delicious and versatile condiment that can be enjoyed in a variety of ways. It is perfect for adding a sweet and tangy flavor to roasted meats, poultry, and fish. It can also be used as a topping for salads, sandwiches, and wraps. And it makes a great addition to a cheese plate or charcuterie board. No matter how you choose to enjoy it, Spicy Cranberry Apple Relish is sure to be a hit.
