SPICY CHOPPED CHEESE SANDWICH
The chopped cheese sandwich originated in New York City. It is not spicy and is traditionally made on a flat top grill. I do not have a flat top and also wanted to incorporate some heat so here is my not so traditional version.

Steps:
- Heat a large nonstick skillet over medium heat. Hold a slice of bread over the skillet to measure the space for the cheese crust. Place 2-4 jalapeño slices in the skillet where the bread will go, then top with ¼ cup Cabot Pepper Jack Cheese roughly the shape and size of the slice of bread. Place the bread on top of the cheese and press down lightly so the melting cheese sticks to the bread.
- Top the bread with ¾ cup Cabot Pepper Jack Cheese, the chopped jalapeño, habanero (if using), green onions, and potato chips. Cover with the other slice of bread. Cook for 2-3 minutes, or until the cheese on the bottom forms a browned crust.
- Using a spatula, lift the sandwich out of the pan and layer the remaining jalapeño slices and Cabot Pepper Jack Cheese in the skillet. Place the sandwich on top of the cheese in the pan, cheese-crust side up, and press down lightly to adhere. Cook for 3-5 minutes, or until the cheese crust is well browned and the cheese in the middle of the sandwich is completely melted. Let the sandwich rest for 1 minute before slicing.
- Enjoy!
Tips:
- Use high-quality ingredients: The better the quality of your ingredients, the better your sandwich will taste. This means using fresh, flavorful cheese, thinly sliced steak, and a soft, fluffy roll.
- Don't be afraid to experiment: There are many different ways to make a chopped cheese sandwich. Feel free to add or remove ingredients to suit your taste. For example, you could try adding some cooked bacon, onions, or peppers.
- Cook the steak properly: The steak should be cooked to your desired doneness. If you like it rare, cook it for a shorter amount of time. If you like it well-done, cook it for a longer amount of time.
- Chop the steak finely: The steak should be chopped into small pieces so that it's easy to eat. You can use a knife or a food processor to do this.
- Use a good melting cheese: The cheese should melt easily and smoothly. Some good options include cheddar, American, or mozzarella.
- Toast the roll: Toasting the roll will help it to hold up better to the sandwich fillings. You can toast it in a toaster, oven, or on a grill.
Conclusion:
The chopped cheese sandwich is a delicious and versatile sandwich that can be enjoyed by people of all ages. It's perfect for a quick and easy lunch or dinner. With its simple ingredients and easy-to-follow instructions, this sandwich is sure to become a favorite in your household.
