SPICY PORK LETTUCE WRAPS

Spicy Pork Lettuce Wraps image

These lettuce cups filled with spicy ground pork take inspiration from Larb. Found in several Southeast Asian countries, Larb usually features seasoned ground meat served with sticky rice or lettuce cups, topped with fresh vegetables and herbs. Toasted rice powder is typically mixed into the seasoning for some crunch and to help thicken the dressing. Katie opts for ground peanuts instead to achieve a similar texture and nutty flavor. These can also be made with ground chicken, duck, turkey, or crumbled tofu in place of the ground pork. Fresh and flavorful, these lettuce cups are super easy to make at home any night of the week.

Categories     One Dish Meal

Time 40m

Yield 8 wraps, 8 serving(s)

Number Of Ingredients 11

2 tablespoons extra-virgin olive oil, divided
1 lb chicken breast (boneless and skinless)
2 -3 chipotle peppers (depending on your love of heat)
3 tablespoons adobo sauce (the chipotles come packed in it)
1/2 cup freshly chopped cilantro
1 lime
1 red bell pepper, diced (or yellow or orange)
3 scallions, thinly sliced
1 avocado, diced
1 head butter or 1 head iceberg lettuce, rinsed and leaves separated
coarse salt & freshly ground black pepper

Steps:

  • Heat the 2 Tbs. oil in a large sauté pan over medium-high. Season the chicken with salt and pepper and sear for 6 minutes on each side until cooked through and browned all over. Move to a cutting board and let sit for 5 minutes. Then dice the chicken.
  • Transfer bell peppers to pan and cook until they just begin to soften, about 3 minutes Remove from pan.
  • In a food processor, combine the cilantro, lime juice, chipotle peppers and the adobo sauce. Process until smooth.
  • Add the chicken back and peppers to the pan, along with the chipotle sauce. Toss until combined.
  • Serve a couple of Tbs. (or more if you're a freak like me) of the chicken mixture in each lettuce cup and garnish with scallions and avocado!

Tips:

  • Choose Fresh and Crunchy Lettuce: Opt for crisp and sturdy lettuce leaves that can hold up well as wraps. Varieties like romaine, iceberg, or butterhead lettuce work great.
  • Marinate the Chicken: Marinating the chicken in a flavorful blend of spices and herbs enhances its taste. Don't skip this step for maximum flavor.
  • Use a Food Processor for the Chipotle Dressing: A food processor makes quick work of creating a smooth and creamy dressing. If you don't have one, you can finely chop the ingredients and whisk them together.
  • Control the Spice Level: Adjust the amount of chipotle pepper or sauce according to your preferred spice level. Start with a small amount and gradually increase it if desired.
  • Assemble Just Before Serving: Assemble the lettuce wraps just before serving to maintain their freshness and prevent the lettuce from wilting.

Conclusion:

Spicy Chipotle Lettuce Wraps offer a delightful combination of flavors, textures, and colors in every bite. They are a perfect appetizer, lunch, or light dinner option that is easy to customize according to your preferences. Experiment with different fillings and toppings to create your unique variations. These lettuce wraps are not only delicious but also a healthier alternative to traditional wraps or sandwiches.
