GRAMMA'S OLD FASHIONED CHILI MAC
This is an old family recipe that my mom has cooked for 50 years. It's a wonderful, 'stick-to-the-ribs' meal that goes wonderful with warm cornbread or rolls. I find that kids love this when they don't like regular 'spicy' chili. Enjoy!

Steps:
- In a medium saucepan over high heat, bring the cream to a boil and then reduce the heat to a simmer. Slowly whisk in the mixed cheeses until smooth. Add the pepper and truffle oil. Add the partially cooked pasta letting it finish cooking in the cheese mix, about 2 to 3 minutes. Spoon into ramekins or other serving dish and top with the bread crumbs.
Tips:
- Use a variety of chili peppers: This will give your mac and cheese a more complex and flavorful heat. Some good options include jalapeños, serranos, and cayenne peppers.
- Don't be afraid to experiment with different spices: In addition to chili peppers, you can also add other spices to your mac and cheese to give it a unique flavor. Some good options include garlic powder, onion powder, paprika, and cumin.
- Use a good quality cheese: The type of cheese you use will have a big impact on the flavor of your mac and cheese. Use a cheese that melts well and has a sharp, flavorful taste. Some good options include cheddar, Gruyère, and Parmesan.
- Cook the macaroni al dente: This means that the macaroni should be cooked until it is just tender, but still has a slight bite to it. This will prevent the macaroni from becoming mushy when you add it to the cheese sauce.
- Make sure the cheese sauce is thick and creamy: The cheese sauce should be thick enough to coat the macaroni evenly, but not so thick that it is difficult to stir. If the cheese sauce is too thin, you can add more cheese or cornstarch to thicken it.
Conclusion:
Spicy chili mac and cheese is a delicious and easy-to-make dish that is perfect for a quick and satisfying meal. With a few simple tips, you can make a spicy chili mac and cheese that is sure to please everyone at the table.
