2 cups uncooked whole wheat elbow macaroni
1 pound lean ground turkey
1 small onion, chopped
2 to 3 jalapeno peppers, seeded and chopped
2 teaspoons olive oil
2 garlic cloves, minced
1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 to 2 tablespoons hot pepper sauce
2 to 3 teaspoons chili powder
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
3/4 cup shredded reduced-fat cheddar cheese

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, cook the turkey, onion and jalapenos in oil over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. This is an old family recipe that my mom has cooked for 50 years. It's a wonderful, 'stick-to-the-ribs' meal that goes wonderful with warm cornbread or rolls. I find that kids love this when they don't like regular 'spicy' chili. Enjoy!

1 cup elbow macaroni
1 pound ground beef
1 small onion, chopped
1 cup chopped celery
½ large green bell pepper, chopped
1 (15 ounce) can kidney beans, drained
2 (10.75 ounce) cans condensed tomato soup
2 (14.5 ounce) cans diced tomatoes
⅛ cup brown sugar
salt and pepper to taste

Steps:

  • Bring a pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a small saucepan, simmer celery and green pepper with water to cover until tender; Drain.
  • Place ground beef in a large heavy skillet over medium heat. Cook until evenly brown. Add onion, and cook until tender and translucent. Drain excess fat. Add celery and green pepper. Stir in kidney beans, condensed tomato soup, diced tomatoes and brown sugar. Season with salt and pepper, and stir in macaroni.

3/4 cup pinto beans, dried
3/4 cup kidney bean, dried
1 (1 1/2 ounce) package chili seasoning mix
2 tablespoons dried onion flakes
2 teaspoons beef bouillon granules
1/4 teaspoon red pepper flakes
1 1/2 cups rotini pasta, uncooked

Steps:

  • Layer pinto and kidney beans in a 1 quart food storage jar with tight fitting lid. Combine chili seasoning mix, onion, bouillon granules and pepper flakes in a small plastic food storage bag, close bag with a twist tie. Place on top of beans spreading out bag to cover beans. Place pasta on top of bag.
  • Seal jar. Cover top of jar with 8 inch circle of fabric, if desired. Attach recipe gift tag.
