Yield Makes 10 skewers

Number Of Ingredients 16

For the chicken hearts:
1 pound (455 g) chicken hearts, or about 50 hearts
2 green onions, trimmed and sliced into slivers
1½-inch (4 cm) piece fresh ginger, peeled and sliced
2 teaspoons Sichuan peppercorns
½ teaspoon Chinese five-spice powder
1 tablespoon Shaoxing cooking wine
1 teaspoon salt
For grilling and serving:
1 tablespoon vegetable oil
½ tablespoon coarsely ground cumin
2 teaspoons red chili powder
Salt
½ tablespoon toasted sesame seeds
Tools:
10 bamboo skewers, Robata grill or barbecue, 1½-inch (4 cm) brush

Steps:

  • To make the chicken hearts: Butterfly the chicken hearts by slicing them lengthwise, cutting deeply without cutting them entirely in half.
  • Smash the green onions and ginger with clean hands to release their flavors.
  • Add the smashed green onions and ginger, along with the Sichuan peppercorns, five-spice powder, cooking wine, and salt to a container along with 1 cup (240 ml) water to make a marinade.
  • Add the chicken hearts to the marinade and stir well to combine. Cover the container with plastic wrap and let marinate in the refrigerator for 1 hour. Any longer and you risk over-marinating.
  • To grill and serve: Thread 5 chicken hearts onto each skewer. The skewers may be kept refrigerated, covered, before cooking for no longer than 2 hours.
  • Prepare a robata or other grill with charcoal that has turned ashy gray and is smoldering hot but not actively emitting flames. Set the skewers down on the grill surface and cook for 2 minutes, then flip over and cook for an additional 2 minutes. When the meat tightens up and oil begins to seep out, it is almost done. At this point, brush the oil on one side of the meat, then sprinkle half of the cumin, red chili powder, and salt, to taste, on top.
  • Flip the skewers over and season the other side in the same way. Flip the skewers once more and toast the newly seasoned side for about 30 seconds. Cook for about a minute or so more on each side.
  • Remove the cooked skewers to a plate, sprinkle with the sesame seeds, and serve immediately.
  • Note: When brushing oil and sauce on the meat while over the fire, do so sparingly, dabbing off any excess, so it doesn't drip onto the flames. If at any point the flames flare up, remove the skewers from the grill until the flames die down.

1 3-pound chicken cut into 8 to 10 pieces
3 tablespoons olive oil
1 medium onion, sliced
1 clove garlic, minced
2 to 3 jalapeno chilies, seeded and minced
1/2 teaspoon cayenne pepper
1 teaspoon ground cumin
1 cup plum tomatoes, chopped, with their juice
1 cup chicken stock or water
Coarse salt and freshly ground pepper to taste
2 tablespoons fresh coriander to garnish
3 cups instant polenta
2 tablespoons olive oil

Steps:

  • Skin the chicken pieces, reserving the wing tips and the skin for stock.
  • Heat two tablespoons of the oil in a heavy casserole and brown the chicken pieces a few at a time. Remove them with a slotted spoon and place them in a bowl.
  • Add the remaining tablespoon of olive oil to the skillet. Saute the onion, garlic and chilies until they become soft (about 10 minutes).
  • Stir in the cayenne and cumin. Cook a minute, then add the tomatoes, chicken stock, salt and pepper along with the chicken pieces and their juices. Cover and simmer gently about 45 minutes, stirring from time to time, until the chicken is cooked and the sauce thickens. If sauce evaporates too fast, add a little water. Correct the seasoning and when ready to serve, sprinkle with coriander.
  • While the chicken is cooking, make the polenta triangles. Preheat broiler. Cook the polenta in water according to directions on package (it will take about five minutes), adding salt to taste, and pour it out onto a flat surface (a large, flat baking tin will do). Smooth it out with a spoon and cool it. Cut the polenta into triangles and place them on a broiling sheet.
  • Brush the polenta triangles with the olive oil and broil until the outside is browned and crisp but the inside soft and creamy (about 15 to 20 minutes). Do not turn over. Serve with the chicken, in a separate dish.

We created this recipe for a cultural event one of my daughter's was having for school. Her theme was Thailand. We researched and came up with this awesome recipe. Since then, I'm asked to bring it all the time, along w/ extra sauce!

Number Of Ingredients 19

1 1/2 lb chicken breasts, boneless and skinless
1 Tbsp fresh parsley diced
1 Tbsp fresh cilantro
2 clove garlic
1 tsp salt
1/2 tsp pepper
1 tsp onion powder
1 tsp grated ginger (i used fresh)
1/2-3/4 c thai pineapple chili sauce
1 pkg small wonton wrappers
1/2 c water to baste
PEACH/HOISIN SAUCE
2 c peaches (fresh or frozen)
3 Tbsp sugar
2 Tbsp reduced sodium soy sauce
1 Tbsp rice wine vinegar
1 1/2 c hoisin sauce
1/3 c water
1 tsp red chili pepper flakes (or more if you want more heat)

Steps:

  • 1. Hoisin Sauce: In a small saucepan add the peaches, water and sugar. Simmer till peaches have softened considerably and all sugar has disolved, about 5-7 minutes. Remove from heat. In a food processor add the peaches, soy sauce, vinegar, pepper flakes and hoisin sauce. Pulse till smooth. Pour into a bowl and chill till ready to use.
  • 2. Chicken Triangles: Dice chicken into very small pieces, set aside. To your saute pan, add the oil and heat to very hot. Once hot add your chicken, add your spices and stir till no longer pink. Add your fresh herbs, saute one more minute.
  • 3. Turn off heat. Now add your chili sauce. Let cool for approximately 8-10 minutes.
  • 4. On a flat surface gather your wonton wrappers, filling and your water.
  • 5. Take one wonton wrapper and using your finger or very small pastry brush, wet the outer edges of the wonton.
  • 6. Add 1-1/2 tsp of filling to the wonton wrapper, and start by taking the bottom edge of the wonton, bring up and to form a triangle, pinch all the edges together. Continue filling the wontons till all the filling has been used.
  • 7. Bake in a preheated 350F oven for 12-14 minutes. Serve with the Peach/Hoisin sauce. Get ready for TONS OF COMPLIMENTS and enjoy!!
