Tips:

  • To save time, use a store-bought enchilada sauce or make a quick and easy homemade sauce by blending tomatoes, chili peppers, garlic, onion, and spices.
  • If you don't have any shredded chicken on hand, you can easily make your own by poaching or roasting a chicken breast. Shred the chicken with two forks when it's cool enough to handle.
  • Don't be afraid to adjust the amount of chili powder and cayenne pepper to your taste. If you like your enchiladas extra spicy, add a bit more; if you prefer them mild, use less.
  • Use a variety of cheeses to create a rich and flavorful filling. A combination of cheddar, mozzarella, and Monterey Jack is a classic choice, but you can also try goat cheese, queso fresco, or pepper Jack.
  • Top the enchiladas with your favorite toppings before baking. Some popular options include sour cream, guacamole, salsa, pico de gallo, and cilantro.
