Time 45m

Yield 4 servings

Number Of Ingredients 12

1 1/4 pounds ground dark meat chicken
1 tablespoon sambal oelek (Asian chili paste)
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil, plus more for brushing on pineapples
4 pineapple rings, drained and patted dry
2 tablespoons unsalted butter
4 large eggs
4 Kaiser rolls, split
12 slices pickled beets, drained
4 lettuce leaves
4 tomato slices
Mayonnaise and ketchup, for serving

Steps:

  • 1. Preheat a grill with a medium-high heat fire.
  • 2. Gently mix together the chicken, sambal oelek, 11/2 teaspoons salt, and 3/4 teaspoon pepper in a large bowl. Form into 4 (4-inch) patties with an indentation in the center of each burger.
  • 3. Brush the grill grate with 1 tablespoon oil. Lay the burgers on the grill and cook until grill marks appear, 5 to 6 minutes. Flip the burgers and continue grilling until an instant-read thermometer inserted sideways registers 160 degrees F, about 5 minutes. Set burgers aside to rest.

BILL GRANGER'S LEMONGRASS AND LIME CHICKEN BURGERS W/ SPICY SLAW

Bill Granger's Lemongrass and Lime Chicken Burgers W/ Spicy Slaw image

I really enjoy the recipes of Australian chef Bill Granger. He always comes up with dishes that somehow sound indulgent and healthy at the same time. This sounds like the kind of fusion food I have always thought I would experience if I ever got to go to Sydney. Cooking time includes chilling time for the burgers.

CHICKEN PAELLA BURGERS WITH SPICY PIMENTO MAYO

Chicken Paella Burgers with Spicy Pimento Mayo image

Provided by Brian Boitano

Time 23m

Yield 20 burgers

Number Of Ingredients 15

1 pound ground chicken
1/2 pound Mexican style chorizo sausage, removed from casing
1/2 pound sea scallops, chopped
1 tablespoon tomato paste
3 cloves garlic, finely chopped
2 tablespoons chopped fresh parsley leaves
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
20 mini rolls
10 butter lettuce leaves, torn in 1/2
4 plum tomatoes, thinly sliced
1 cup mayonnaise
1 teaspoon chili powder
1 tablespoon lemon juice
1 (4-ounce) jar pimentos, finely chopped, juice reserved

Steps:

  • For the burger:
  • Combine all the burger ingredients, except the rolls, lettuce and tomatoes in a large bowl and mix well. Form into small patties about 2 inches in diameter and arrange on a platter lined with waxed paper. Cover with plastic wrap and refrigerate until ready to grill.
  • Preheat the grill to medium-high heat. Oil the grill grates and put the burgers on the grill to cook for 4 minutes per side. Transfer to a serving platter and serve on mini rolls with lettuce, tomato and spicy pimento mayo.
  • For the mayo:
  • Combine all the ingredients and the reserved pimento juice into a small bowl. Mix well until blended and serve with the burgers

Tips:

  • To ensure evenly cooked and juicy chicken burgers, it's crucial to use ground chicken that is well-chilled. If the chicken is too warm, it can result in dry and crumbly burgers.
  • For the best flavor and texture, freshly ground chicken is highly recommended. Pre-ground chicken from the store may not provide the same level of quality and taste.
  • Adding bread crumbs to the chicken mixture helps bind the ingredients together and creates a firmer texture. If you prefer a softer burger, you can reduce the amount of bread crumbs or substitute with other binding agents like mashed potatoes or oats.
  • To achieve a crispy outer layer, it's essential to coat the chicken burgers in seasoned flour before pan-frying. This coating helps create a golden-brown crust and locks in the juices.
  • Using a combination of cayenne pepper and paprika adds a perfect balance of heat and smoky flavor to the chicken burgers. Adjust the amount of cayenne pepper based on your desired level of spiciness.
  • For a more intense spicy flavor, consider adding a dash of chili powder or chopped chili peppers to the chicken mixture.
  • Pan-frying the chicken burgers on medium heat allows them to cook thoroughly without burning the outside. Be patient and avoid overcrowding the pan to ensure even cooking.
  • To prevent the chicken burgers from drying out, baste them with the melted butter mixture during the last few minutes of cooking. This will add moisture and enhance the flavor.
  • To ensure food safety, it's crucial to cook the chicken burgers to an internal temperature of 165°F (74°C). Use a meat thermometer to accurately measure the temperature.
  • Feel free to experiment with different toppings and sauces to create unique and flavorful combinations. Some popular options include lettuce, tomato, cheese, avocado, and spicy mayonnaise.

Conclusion:

Homemade spicy chicken burgers are a delicious and satisfying meal that can be enjoyed for lunch, dinner, or even as a game-day snack. By following these tips and the detailed recipe provided, you can create juicy, flavorful, and perfectly spiced chicken burgers that will tantalize your taste buds.
