Tips:

  • To prepare hominy (nixtamal), you can use dried hominy, which needs to be soaked overnight. Drain the water and add the hominy to the soup. You can also use canned hominy, which just needs to be drained and rinsed.
  • Bone-in chicken thighs are ideal for this recipe as they contribute richness and flavor to the soup. However, you can also use boneless, skinless chicken breasts or thighs if you prefer. Just be sure to adjust the cooking time accordingly.
  • Feel free to customize the spiciness of the soup by adjusting the amount of chili powder and jalapeño pepper. For a milder soup, use less chili powder and omit the jalapeño pepper. For a spicier soup, add more chili powder and include the jalapeño pepper.
  • Top the soup with your favorite garnishes such as chopped cilantro, sliced avocado, crumbled cotija cheese, or sour cream.
