OLD SCHOOL MEETS NEW -- CHEESY, ONION, SPICY, BBQ BURGER



Old School Meets New -- Cheesy, Onion, Spicy, BBQ Burger image

I call this "Old School" vs "New School" because I use old classic cooking flavors, with some new flavors to make a great burger. Lipton Onion Soup ... yes the classic, then crisp iceberg lettuce (iceberg is a must), frozen onion rings, now make your own if you want - but I cheat and just buy them (Ore Ida). Sharp aged cheddar cheese (if possible, right from the deli), and a jalapeno, BBQ, bacon mayo. And please, get a good burger roll, don't get those skimpy pre-packaged rolls. This recipe will make 8 nice size burgers so you can always cut this in half if you want. It is a great recipe. Serve with chips, dill pickles, potato salad, macaroni salad ... any of your favorites.

2 lbs ground beef
1 (2 ounce) package Lipton Onion Soup Mix
2 tablespoons Worcestershire sauce
1/2 cup water
8 rolls (I like to use a hearty kaiser roll, but use your favorite)
1 tablespoon olive oil
iceberg lettuce
8 slices cheddar cheese (I use an aged sliced cheddar, I just get exactly what I need right from the deli and ask them to sli)
24 onion rings (3 per burger, I used a bag of frozen Ore Ida brand frozen fried onion rings and cooked according to )
6 tablespoons mayonnaise (no Miracle Whip)
2 jalapenos, ribs and seeds removed and fine chopped (use one if you don't like heat)
2 tablespoons barbecue sauce (any brand, just plain)
1/4 cup bacon, fine chopped (after it is cooked)

Steps:

  • Bacon -- A couple of options for approximately 4-5 slices of bacon. You can either dice and pan saute until golden brown and then let drain on a plate lined with a paper towel; you can oven bake, even buy pre-cooked bacon and then just dice. For that matter, you can buy a bag of real bacon bits cooked and diced. But my favorite is to cook mine on a paper plate lined with a paper towel and topped with a paper towel and cook in the microwave for 3-4 minutes until crisp -- You get the idea. 1/4 cup crispy chopped bacon bits. Use what you like best.
  • Burgers -- Make these first. I actually like to freeze mine for a short period. It just firms them up and makes it easy to grill. In a medium size bowl, add the worcestershire, lipton onion soup and water and mix well. Add in the beef and mix (using your hands). Don't over mix. Over mixing can make the burgers tough. Form into 8 patties. Place on a cookie sheet lined with parchment paper or foil. Freeze for about 15-30 minutes. It just firms them up and makes it easier to grill.
  • Mayo Dressing -- Burgers are chilling, make the mayo dressing. In a small bowl, mix the mayonnaise, bacon bits (whatever way you made the bacon), BBQ sauce (any brand), and jalapenos. Cover and refrigerate.
  • Onion Rings -- Now I cheat - I admit. I hate making them, but if you want to make your own, GO FOR IT! If not, I use frozen Ore Ida rings, just set on the cookie sheet in the oven (follow pkg directions) and bake. Mine took approximately 15 minutes. I started the burgers about half way through cooking the onions so they all came out about the same time. I planned on 3 rings per burger which was about right.
  • Grilling -- I use a outdoor grill, but an indoor grill pan would also work great. If not, a large saute pan will be fine. I heat the grill or pan to medium heat drizzled or brushed with the olive oil.
  • With your thumb, push in the center of the burger to make an indentation, not all the way through, but a nice indentation. This will prevent the burger from "puffing" up. Grill on side one until golden brown with good grill marks and flip. Finish grilling the burger until medium well or the desired doneness you prefer. I like medium well for burgers. The last minute, add the cheese, cover and remove from the heat. One minute later - the cheese will be melted and you will have the perfect burger.
  • Rolls -- The last few seconds I put the rolls on the grill for a light toast. Just a few seconds.
  • Burgers -- Slather a little of the BBQ mayo of each side of the rolls, top with a burger, cheese, onion rings, lettuce and the top roll.
  • Serve -- Just ENJOY!

3/4 cup very thinly sliced sweet onion
1 tablespoon margarine
1/2 teaspoon caraway seed (optional)
4 Grillers Prime® Veggie Burgers or Grillers® Vegan Veggie Burgers
1 tablespoon brown mustard or Dijon mustard
2 ounces thinly-sliced Gruyere cheese, Swiss cheese, or soy cheese

Steps:

  • 1. Cook onion in hot margarine in nonstick frypan over medium-low heat, stirring frequently, for 14 to 18 minutes or until lightly browned. Stir in caraway seed, if desired.
  • 2. Meanwhile, place patties on baking sheet. Bake at 350 degrees F for 8 minutes. Turn patties. Bake 7 minutes more. Spread mustard on top of patties. Top with cheese. Bake for 1 to 2 minutes more or until cheese melts.
  • 3. Spoon onion over top of patties.

  • Preheat grill
  • Use a food thermometer to be sure patties reach minimum internal temperature of 165 degrees F.

CHEESY ONION SMASH BURGERS

Today we're prepping for summer with Cheesy Onion Smash Burgers. Short rib patties with onions smashed for the perfect burger recipe.

2 lbs of Short Rib (cubed or already ground)
1/2 of a White Onions (Finely Sliced)
1 tsp of Kosher Salt
1 tsp of Black Pepper
1 tsp of Garlic Powder
6 Slices of Bacon (cut in half)
6 Slices of American Cheese
2 tbsp of Spicy Pepper Jam
2 tbsp of Mayonnaise
Burger Buns (toasted)

Steps:

  • (If grinding your own meat, start here): Cube up your short rib meat and then place in a bowl into the freezer for 15 minutes. Keep your meat cold as much as possible in order to prevent contamination. Set up your meat grinder to a medium size grind, and when ready, pull the short rib out of the freezer. It should be cold and firm, but not frozen. If it is frozen, then let is thaw till it is firm.
  • Add your meat to the grinder hopper and carefully push it in. Place a cold bowl at the end of the grinder for the meat to fall into. Once the meat is ground, throw it back into the grinder for a second grind. This will help to get it finer and less gritty. Once it is ground the second time, place the meat in a bowl and add to your freezer for 20 minutes.
  • (If you are not grinding your meat, start here:): Preheat your fire to a medium high temperature (around 375-400F). Add a cast iron skillet or plancha over the fire about 2 minutes before cooking.
  • First, add you're bacon to the skillet and cook until they are done to your liking. Once done, pull them off and set aside. Next, add your burger burgers and let crisp up for 1 minute. Once done, pull off and set aside.
  • Pull the ground meat out of the fridge and let thaw for a minute if needed. Grab a handful of meat (around 1/4 lbs... ish) and gently roll it into a ball. Repeat this for 6-8 balls or until your out of meat. Add the ground meat balls to the skillet, top each with a small handful of sliced onions, then season with salt, pepper and garlic powder.
  • As the meat sizzles, get out a small piece of parchment paper and a larger spatula/burger smasher. Place the parchment over one ball and then firmly press with the spatula until the burger is "smashed" on the skillet. Repeat this for each burger and let cook for another 1-2 minutes. Carefully flip each burger over and then season the new side with salt, pepper and garlic. Top each burger with a slice of cheese and let melt for 1-2 minutes. Once melted, pull each burger off and rest.
  • Now let's start building the burger. Add the spicy pepper jam to the base burger bun and then add a single or double patty burger on top. Next, add the bacon slices and then mayo to the top bun. Serve and enjoy!

Remove from heat; cool slightly., In a large bowl, combine 1/4 cup marinara sauce, chopped mozzarella cheese, bread crumbs, seasonings and onion mixture. Add chicken; mix lightly but thoroughly. Early in the writing of this book, I struggled to get my ruminations on paper. Although I hesitate to call my temporary impasse writer's block, I can't imagine much worse. Words wouldn't come. And the ones that did weren't smart or engaging or funny. After an eternity of fretting, I began making burgers for lunch. My intent was to cook my way through the recipes I planned for the book. This onion burger was the first thing I tried. After 2 days of oniony repasts, the dark cloud lifted and the words came.

1 pound ground chuck
2 onions, shaved (use a mandoline or a very sharp knife to make the thinnest possible slices)
American or pimento cheese
6 buns, split
Mustard

Steps:

  • Place a heavy skillet over medium-high heat. Leave it there for 5 minutes. Loosely gather a handful of ground beef and slip it into the pan. Repeat 6 times. The burgers should be freeform lumps.
  • With the side of a spatula, push the burgers into a semblance of a round. After about a minute, pile on all the onions and then, with as much force as you can manage, smash the onions into the meat. Again, work the sides of the patties into a semblance of a round. Cook another minute and then flip. Season with salt. Smash the burgers again, hard.
  • Place burger on bottom half of the bun and spread with mustard. Spread the cheese on top half of the bun and place on the burger.

1 clove garlic, minced
1 teaspoon hot sauce (recommended: Frank's Red Hot)
Salt and freshly ground black pepper
4 strips bacon, diced
1/2 onion, chopped
1 cup grated sharp Cheddar
4 burger buns
Lettuce, tomato, pickles for garnish

Steps:

  • Preheat grill to medium.
  • In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.

2 packages (17 ounces each) Hawaiian sweet rolls
4 cups shredded cheddar cheese, divided
2 pounds ground beef
1 cup chopped onion
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, drained
1 tablespoon Dijon mustard
1 tablespoon Worcestershire sauce
3/4 teaspoon salt

GLAZE:
1 cup butter, cubed
1/4 cup packed brown sugar

2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 350°. Without separating rolls, cut each package of rolls horizontally in half; arrange bottom halves in 2 greased 13x9-in. baking pans. Sprinkle each pan of rolls with 1 cup cheese. Bake until cheese is melted, 3-5 minutes., In a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, breaking beef into crumbles, 6-8 minutes; drain. Stir in tomatoes, mustard, Worcestershire sauce, salt and pepper. Cook and stir until combined, 1-2 minutes., Spoon beef mixture evenly over rolls; sprinkle with remaining cheese. Top with bacon. Replace tops. For glaze, in a microwave-safe bowl, combine butter, brown sugar, Worcestershire sauce and mustard. Microwave, covered, on high until butter is melted, stirring occasionally. Pour over rolls; sprinkle with sesame seeds. Bake, uncovered, until golden brown and heated through, 20-25 minutes. Freeze option: Cover and freeze unbaked sandwiches; prepare and freeze glaze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Pour glaze over buns and sprinkle with sesame seeds. Bake sandwiches as directed, increasing time by 10-15 minutes, until cheese is melted and a thermometer inserted in center reads 165°.

2-1/2 lb lean ground beef
1 pkg dry onion soup mix
1/3 c chili sauce
1/4 c water
1 4 oz canned diced, green chilis, drained
1/4 tsp pepper
8 slice pepper jack cheese
8 hamburger rolls, toasted.

Steps:

  • 1. Heat grill to med-high. Combine onions and oil in square disposabe pan. In lg bowl, combine all ingredients except for cheese slices and rolls. Mix well w/ hands.
  • 2. Make 8 patties out of mix. Place pan w/ onions on grill and cook, stirring for 10 mins. Remove pan from grill.
  • 3. Cook burgers on grill, turning once, for about 10-12 mins. Top each burger w/ a slice of cheese and some onions. Serve on hamburger rolls.
