Steps:
- Prepare spicy marinade by mixing together all ingredients.
- Wash chicken and pat dry.
- Pour marinade over chicken to coat.
- Cover and refrigerate at least 2 hours, but no longer than 6 hours.
- Brush or spray grill with vegetable oil.
- Heat coals or gas grill for direct heat.
- Remove chicken from marinade.
- Place on grill rack, cover and grill 4 to 6 inches from medium heat 15 minutes to 20 minutes, turning once.
SPICY CARIBBEAN GLAZED CHICKEN
Another of my glazed chicken recipes. This one uses some of the spice from carribean cooking and adds a nice sweet, spicy and sour taste to the chicken.

Steps:
- Heat grill.
- In small saucepan, combine chili sauce, brown sugar, lime juice, hot pepper sauce, allspice and ginger.
- Bring to a boil, stirring occasionally.
- Remove from heat.
- Place chicken on grill, skin side down, over low heat.
- Cook 45 to 60 minutes or until chicken is fork tender and juices run clear, turning once and brushing frequently with glaze during last 15 minutes of cooking.
- Bring any remaining glaze to a boil; serve as a sauce with chicken.
SPICY NUTMEG CHICKEN (GRENADA -- CARIBBEAN)

- FOR THE NUTMEG SYRUP: In a saucepan, combine the 1 cup of water along with the sugar, cinnamon & nutmeg. Mix thoroughly & bring to a boil, then reduce heat & cook, stirring for 2-3 minutes.
- In a small container combine cornstarch & water & mix thoroughly, before stirring it into the syrupy mixture, & blending well.
- Simmer the syrup for another 5 minutes or so until thickened somewhat.
- Remove from heat & stir in the rum flavoring, then set aside.
- FOR THE CHICKEN: Preheat oven to 400 degrees F.
- Place chicken thighs in a 13"x9" baking dish
- In a small container combine garlic, onion, salt & pepper, mixing well, then spread this mixture over the chicken thighs.
- Bake thighs for 15 minutes, then remove from oven.
- While chicken is baking, in a bowl, combine soy sauce, pepper sauce, Nutmeg Syrup & ground ginger, mixing well.
- After the 15 minutes of baking, remove chicken from the oven & turn the temperature down to 350 degrees F.
- Baste the thighs with the Nutmeg Syrup mixture & return them to the oven to bake for at least 60 minutes, basting frequently.
- Serve hot with additional syrup mixture, if desired.

- 1. Place all ingredients except chicken in food processor or blender and blend until smooth.
- 2. Pour over chicken and marinade for 2-6 hours.
- 3. No longer than 6 hours.
- 4. Grill chicken and brush with marinade.
- 5. Note: You can use serrano chiles instead of jalapenos.
