Time 16m

Yield 4 serving(s)

Number Of Ingredients 10

2 (6 ounce) cans albacore tuna, drained and flaked
1 cup seasoned bread crumbs, divided
1 egg, beaten
1/4 cup finely chopped green onion
1/4 cup finely chopped sweet red pepper
1/4 cup reduced-fat mayonnaise
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1 tablespoon butter

Steps:

  • In a large bowl, combine the tuna, 1/3 cup bread crumbs, egg, onions, red pepper, mayonnaise, lemon juice, garlic powder and cayenne.
  • Divide mixture into eight portions; shape into 2-inch balls.
  • Roll balls in remaining bread crumbs.
  • Flatten to 1/2 inch thickness.
  • In a large nonstick skillet, cook tuna cakes in butter for 3-4 minutes on each side or until golden brown.

Tips:

  • For the best results, use high-quality canned tuna. Solid white albacore tuna is a good option.
  • Be sure to drain the tuna well before using it in the recipe. This will help to prevent the fish cakes from becoming too soggy.
  • If you don't have any bread crumbs, you can make your own by toasting a few slices of bread and then grinding them in a food processor.
  • Feel free to add other ingredients to the fish cakes, such as chopped vegetables, herbs, or spices. Some good options include diced bell peppers, onions, celery, parsley, dill, or paprika.
  • Serve the fish cakes with your favorite dipping sauce, such as tartar sauce, mayonnaise, or ketchup.

Conclusion:

Spicy canned tuna fish cakes are a quick, easy, and delicious way to enjoy tuna. They're perfect for a weeknight meal or a casual lunch. Feel free to experiment with different ingredients and flavors to create your own unique fish cakes.
