I threw this together one night when I was craving a Cajun chicken pasta dish I used to make. I've missed it since going low-carb. This dish was a perfect substitute! Great texture and a very, very mild vegetable flavor. Mostly just Cajun yumminess! Adjust the spices to your taste.

CHAKALAKA (SPICY VEGETABLE RELISH)

Chakalaka (Spicy Vegetable Relish) image

Like chutney in India or salsa in Mexico, no one in South Africa prepares chakalaka, a spicy vegetable relish, the same way. And if you ask anyone who makes the best version, they will likely name their own mother or grandmother. Here is our version, full of vegetables and spices. It's akin to giardiniera (the Italian mix of pickled vegetables that includes cauliflower and carrots) and also to English piccalilli relish, whose roots are in South Asian pickled vegetables, which is to say that cultures all across the world have some version of preserved vegetables that enhance many meals. Serve the chakalaka with bread, rice, grilled meats or fish, stews...anything. It's particularly delicious with grilled sausages or tucked into a grilled cheese sandwich.

SPICY STIR-FRIED CABBAGE

Spicy Stir-Fried Cabbage image

This is a vegetarian version of a classic Chinese stir-fry. The authentic versions I've encountered include some pork or bacon, but the chilies, ginger, garlic, star anise and the cabbage are flavorful enough without meat. I've added carrots for color.

Categories     dinner, easy, quick, weekday, one pot, main course

Time 10m

Yield Serves four

Number Of Ingredients 11

4 garlic cloves, minced
2 teaspoons minced ginger
1/2 teaspoon red pepper flakes
1 star anise, broken in half
2 teaspoons soy sauce (more to taste)
2 tablespoons Shao Hsing rice wine or dry sherry
2 tablespoons peanut or canola oil

1 medium carrot, cut into julienne
Salt to taste
2 tablespoons minced chives, Chinese chives or cilantro

Steps:

  • Combine the garlic, ginger, red pepper flakes and star anise in a small bowl. Combine the soy sauce and wine or sherry in another small bowl.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and tilting it back and forth. Add the garlic, ginger, pepper flakes and star anise. Stir-fry for a few seconds, just until fragrant, then add the cabbage and carrots. Stir-fry for one to two minutes until the cabbage begins to wilt, then add the salt and wine/soy sauce mixture. Tips and Conclusion

Creating a flavorful and zippy spicy cabbage relish is a delightful culinary endeavor that requires careful attention to detail. Here are some essential tips to ensure a successful and satisfying outcome:

  • Select the Right Cabbage: Choose a firm and crisp cabbage, preferably a green or red cabbage, for the best texture and flavor.
  • Cut the Cabbage Thinly: Finely slicing the cabbage will allow it to absorb the marinade more effectively and result in a more tender relish.
  • Use a Quality Vinegar: Opt for a high-quality vinegar, such as apple cider vinegar or white vinegar, to provide a balanced acidity to the relish.
  • Experiment with Spices: Feel free to adjust the spices and seasonings to suit your taste preferences. You can add more chili peppers for a spicier relish or increase the sugar for a sweeter version.
  • Let it Marinate: Allow the relish to marinate for at least 30 minutes, or even overnight, to allow the flavors to meld and develop fully.
  • Use Fresh Herbs: Incorporating fresh herbs, such as cilantro or parsley, can add a vibrant pop of flavor and color to the relish.

In conclusion, creating a spicy cabbage relish is a delightful culinary project that yields a versatile condiment to enhance a variety of dishes. Whether you prefer a classic recipe or a more adventurous twist, experimenting with different ingredients and techniques will lead you to a personalized relish that will tantalize your taste buds. Enjoy the process of making and savoring this delicious condiment!
