I owe this "treasure" to my dad, he used to make this for breakfast on the weekends. Its one of my childhood favorites, I just spiced it up a bit.

Categories     Potatoes

Time 25m

Number Of Ingredients 7

3 idaho potatoes
1 tsp butter
1 tsp olive oil
1/4 c ketchup
1 tsp paprika
1 tsp red pepper flakes( or to taste)
salt/black pepper to taste

Steps:

  • 1. Leaving the skin on, cut the potatoes into bite sized pieces. Boil al dente (not mushy) for about 5- 7 minutes.
  • 2. Drain, then set them aside. In a skillet on medium-high, put the butter/olive oil and pour the drained potatoes in. Then add the rest of the ingredients and gently turn a few times, until the potatoes are well coated and form a crust. This should only take a few minutes.

Tips:

  • Choose the right potatoes: Yukon Gold or red potatoes are the best choices for this recipe, as they hold their shape well and have a creamy texture.
  • Cut the potatoes evenly: This will help them cook evenly.
  • Soak the potatoes in water before cooking: This will help them release excess starch, which will prevent them from sticking together.
  • Use a large skillet: This will give the potatoes plenty of room to cook without overcrowding.
  • Don't overcrowd the skillet: If you do, the potatoes will steam instead of fry.
  • Cook the potatoes over medium-high heat: This will help them get crispy on the outside and tender on the inside.
  • Stir the potatoes frequently: This will prevent them from burning.
  • Season the potatoes generously: Use a variety of spices, such as paprika, garlic powder, onion powder, and cayenne pepper.
  • Serve the potatoes immediately: They are best when they are hot and crispy.

Conclusion:

This recipe is a delicious and easy way to make spicy breakfast potatoes. The potatoes are crispy on the outside and tender on the inside, and they are packed with flavor. This recipe is perfect for a quick and easy breakfast or brunch, and it is also a great side dish for dinner.
