Steps:

  • For the beans:
  • In a large pot, soak beans overnight covered in water by 2 inches. Drain and set aside.
  • In the same pot, heat the olive oil. Add the onion, jalapeno pepper, garlic, and bay leaf and cook until the vegetables begin to soften, about 5 minutes. Add the beans and cover with water by about 1-inch. Bring to a boil, reduce the heat, cover, and simmer for 1 to 1 1/2 hours, or until the beans are tender. Remove the bay leaf and discard. Steps:

  • In a kettle combine the beans, the ham hock, the garlic, the bay leaf, the orégano, the onion, the bell peppers, the red pepper flakes, the chili powder, and 8 cups water and simmer the mixture, covered, stirring occasionally, for 3 hours, or until the beans are tender.   • To quick-soak dried beans:
  • In a colander rinse the beans under cold water and discard any discolored ones. In a kettle combine the beans with enough cold water to cover them by 2 inches, bring the water to a boil, and boil the beans for 2 minutes. Remove the kettle from the heat and let the beans soak, covered, for 1 hour.

3/4 cup golden raisins
1/2 cup dried apricots, halved
1/2 cup chopped dried figs
1/2 cup cognac
3 large red onions, cut into 1/2-inch rounds

1 tablespoon dark brown sugar
1 tablespoon red wine vinegar
One 15-ounce can black beans, drained and rinsed

  • For the spicy pork burgers: Break up the meat in a medium bowl and spread it up on the sides so that the seasoning can really permeate the meat. Add the sherry, soy sauce, Worcestershire and cayenne. Mix with your hands to make sure all of the flavors get integrated but do not overmix. (The more you work the meat, the tougher the burger.) Form the meat into 4 even patties about 3/4-inch thick.
  • Heat a large cast-iron skillet and add the oil. When the oil begins to smoke lightly, remove the skillet from the heat and arrange the patties in a single layer in the skillet. Return the skillet to the heat and cook, undisturbed, for 5 to 6 minutes. Rotate the patties a quarter turn and cook until cooked through, 3 to 5 more minutes. Use a metal spatula to flip the patties on their second sides and cook for an additional 5 to 8 minutes. Remove the skillet from the heat and place 2 slices of American cheese on each patty. Let the patties rest in the skillet so the cheese melts.

1 cup long grain rice
1/2 teaspoon ground turmeric (closer to 1 teaspoon for me)
1/2 teaspoon freshly grated ginger
1/4 teaspoon ground coriander
salt, to taste

Steps:

  • In a soup pot, heat 2 tablespoons olive oil and sauté 2 garlic cloves and the jalapeño pepper for about 5 minutes on low heat.
  • Add the beans, chili powder, cumin, 1/2 cup stock and cook, uncovered for approximately 25-30 minutes, increasing heat to low-medium. Add the bell pepper last 5 minutes of cooking. Season to taste with salt.
  • In the meantime, heat the remaining tablespoon of olive oil in a sauté pan and sauté the 2 garlic cloves on low heat for about 2 minutes. Add the remaining 2 cups of stock, bring to a boil. Stir in the rice, reduce heat and cook 17 minutes.
  • Once rice is cooked, stir in the spices. Season to taste with salt.
  • Arrange the black beans on one side of a serving platter. Arrange the rice on the other half.

They are a good way to use up those veggies in your fridge that need using! I like to chop enough veggies for several batches, then freeze them for future use.

Steps:

  • Saute onions, peppers, carrots and celery in a little oil until soft.

Her blog centers on healthful, low-sugar recipes suitable for the South Beach Diet, but her recipes are great for anyone. My husband, not a huge fan of winter squashes, really enjoys this filling soup. We add a squeeze of lime juice at the table. I use packaged butternut squash chunks from Sam's and roast them about half an hour until soft and slightly caramelized. I also use strong homemade chicken or turkey stock instead of vegetable broth and 2 cups of cooked black beans instead of the canned ones.

1 large butternut squash (about 1.5 lbs.)
salt & freshly ground black pepper
2 teaspoons olive oil
2 cups finely chopped onions
2 cups finely chopped celery
6 garlic cloves, finely minced (about 1 T minced garlic)
6 cups vegetable stock (or slightly more, if you'd like a thinner soup) or 6 cups canned vegetable broth (or slightly more, if you'd like a thinner soup)
2 teaspoons ground cumin (or more)
1 (15 ounce) can black beans
1 medium red bell pepper, chopped small
1/2 cup chopped cilantro (plus more to garnish soup if desired)
1 -2 tablespoon Tabasco jalapeno sauce (or other jalapeno hot sauce of your choice)
low-fat sour cream or plain Greek yogurt (to garnish)
lime wedge (optional)
tortilla chips (optional)

Steps:

  • Preheat oven or toasted oven to 400F/200°C Cut butternut squash in half and use a sharp spoon to scoop out seeds. Place squash on a baking sheet and season with salt and fresh ground black pepper. Roast squash until it is soft enough to pierce easily with a fork, and starting to slightly brown, about 50-60 minutes. Let squash cool enough to handle.
  • While squash is roasting, chop onion and celery and mince the garlic. Heat olive oil in large non-stick soup pot and saute onions and celery until they're soft, about 7 minutes. Add minced garlic and cook 2-3 minutes more. Add 2 cups of vegetable broth and simmer the mixture about 10 minutes.
  • As soon as the squash has cooled enough to handle, scrape the flesh away with the skin and mix it with the other 4 cups of broth and the ground cumin. Add this mixture to the soup pot and simmer about 20 minutes; then use an immersion blender to puree the soup.
  • While the soup simmers, rinse the black beans well with cold water and let them drain in a colander. Chop the cilantro and red bell pepper. After you're pureed the soup add the beans, red bell pepper, and cilantro and simmer about 15-20 minutes more, adding a little more stock if you'd like a thinner soup. Stir in the Green Tabasco Sauce to taste and serve hot, garnished with low-fat sour cream or plain Greek yogurt, lime wedges, and tortilla chips if desired.

3 tablespoons fat free sour cream (or non-fat plain yogurt)
2 teaspoons chipotle chiles in adobo, chopped
1 (16 ounce) can black beans, rinsed and drained
3 tablespoons red onions, finely chopped (or use green onions)
3 tablespoons fresh cilantro, chopped
1 garlic clove, finely chopped
1 tablespoon mild chili powder
1 teaspoon ground cumin
2 tablespoons lime juice
1 teaspoon salt (to taste)

Steps:

  • Stir together mayonnaise, sour cream (or yogurt) and chipotle in a small bowl; set aside.
  • Combine black beans slightly mashed, chopped onion, cilantro, garlic, chili powder, cumin and lime juice in a large bowl.
  • Stir all the ingredients until mixture holds together and season with salt to taste.
  • Serve with crackers as a dip or spread on sandwiches or pita breads cut in halves and top with shredded lettuce, sliced avocados and tomatoes. Serve within 30 minutes.

A quick easy recipe using canned black beans for a side dish any night of the week. I love this with my Margarita Chicken or just any citrus grilled chicken or fish. Maybe a nice spicy chili rub on chicken would be a nice dish with these beans.

2 (15 ounce) cans black beans, drained and rinsed
1 medium onion, diced fine
2 tablespoons garlic
1 (4 ounce) can green chilies
3 tablespoons salsa
1 tablespoon cumin
1 teaspoon chili powder
1 tablespoon olive oil to saute the onion and garlic
1/4-1/2 cup chicken broth (optional, see step 3)
1 teaspoon kosher salt, to taste
1/2 teaspoon ground black pepper, to taste
2 tablespoons fresh cilantro, fine chopped as a garnish

Steps:

  • Vegetables -- In a large saute pan, heat to medium and add the olive oil and saute the onion and garlic and cook on medium, not too high, you want them to sweat more. Cook 4-5 minutes.
  • Spices -- Add in the green chilies, salsa, cumin, chili powder, salt and pepper and mix well, still on medium heat. Now add in the beans and stir to combine.
  • Just let it hang out and cook on low heat while you prepare your main course. As it simmers I often add just a little chicken broth for some moisture. Each time it is different, 1/4 cup up to 1/2 cup, depending on how long they simmer. After 5 minutes the beans are done, but if you are still waiting on your main dish to be ready, maybe add a little more broth as the beans simmer so they don't dry out.
  • Right before serving -- taste for salt and pepper and stir in the cilantro. That's it!

Tips:

  • Use dried black beans for the best flavor and texture. Soaking the beans overnight before cooking will help them cook more evenly and quickly.
  • Rinse the beans thoroughly before cooking to remove any dirt or debris.
