BEEF AND BEAN ENCHILADAS

Beef and Bean Enchiladas image

This recipe is from a friend of mine who made a family cookbook of their favorite recipes. We have really enjoyed the cookbook and I will be posting more of her recipes. For the enchiladas, I have made them with the original recipe (listed below) and then last night I didn't have all the right ingredients, so I used a can of RoTel that had the lime and cilantro in place of the can of green chilies. I also used recipe #66591 instead of a packet from the store (I didn't have any on hand). I also always use the flour tortillas that you can buy at Costco that you cook yourself. These enchiladas have a bit of spice to them. They might be too spicy for some and not enough for others, they are perfect for us!!

Tips:

  • Choose the right tortillas for the job. Corn tortillas are traditional for enchiladas, and they have a slightly chewy texture that holds up well in the casserole. You can also use flour tortillas, which are softer and more pliable.
  • Shred your own cheese. Pre-shredded cheese is often coated with cellulose, which can prevent it from melting smoothly. Shredding your own cheese ensures that it will melt evenly and create a creamy, flavorful sauce.
  • Use a variety of beans. Black beans, pinto beans, and kidney beans are all good choices for this recipe. You can also use a mix of different beans.
  • Don't skimp on the spices. Chili powder, cumin, and oregano are all essential spices for enchiladas. You can also add other spices, such as garlic powder, onion powder, or cayenne pepper, to taste.
  • Use a flavorful sauce. A good enchilada sauce should be flavorful and slightly spicy. You can use your own homemade sauce or a store-bought sauce.
  • Don't overcook the enchiladas. Enchiladas should be cooked until they are heated through and the cheese is melted, but they should not be overcooked. Otherwise, they will become dry and tough.

Conclusion:

Spicy beef and bean enchilada pie is a delicious and easy-to-make dish that is perfect for busy weeknights. It is also a great way to use up leftover beef and beans. This recipe is sure to be a hit with your family and friends.
