  • Press the tofu in a tofu press like the EZ Tofu Press for 10-12 minutes, tightening the knobs every 3-4 minutes.
  • Add the oil, BBQ sauce, apple cider vinegar, and spices to a bowl and whisk to combine.
  • Pour the sauce into a gallon sized zip lock bag.
  • Remove the tofu from the tofu press and cut into small bite-sized chunks.
  • Place the tofu squares into the zip lock bag and gently toss them in the marinade to coat.
  • Allow the tofu to marinate for 20 minutes.

2 tablespoons BBQ sauce
1 tablespoon oil
1 tablespoon garlic powder
1 tablespoon sriracha
1 teaspoon black pepper
15 oz firm tofu, or extra firm tofu

4 wooden skewers

Steps:

  • Soak wooden skewers in a shallow dish filled with water to prevent burning.
  • Place tofu on a paper towel-lined plate. Top with another paper towel and another plate. Microwave for 3 minutes.
  • Slice tofu into 9-12 cubes and set aside
  • Combine water, maple syrup, soy sauce, BBQ sauce, oil, garlic powder, Sriracha, and pepper then stir.
  • Place tofu in the marinade and refrigerate for at least 1 hour.

½ cup sherry vinegar
½ cup low-sodium soy sauce
⅓ cup olive oil
1 teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon cayenne pepper
½ teaspoon dried marjoram or thyme
¼ teaspoon black pepper

Steps:

  • Wrap tofu in a clean dish towel and weight it with something heavy such as a large can; leave it to drain for 30 minutes.
  • Meanwhile, mix together remaining ingredients in a bowl.
  • Cut each piece of tofu crosswise into 6 thick slices and put it all in a baking dish. Pour marinade over tofu, turning to coat, and chill, covered, turning occasionally, at least 30 minutes or up to 48 hours. Longer is better, but shorter is totally fine.

1 lb extra firm tofu, drained and cut lengthwise into 8 slices
1/2 cup fresh lime juice
1/2 cup maple syrup
1/4 cup low-sodium tamari or 1/4 cup soy sauce
2 teaspoons chili paste with garlic
3 garlic cloves, minced (about 1 tablespoon)
1/4 teaspoon fresh ground black pepper

Steps:

  • Place the tofu slices on several layers of paper towels and cover with additional paper towels. Let stand 20 minutes, pressing down occasionally with your hands to squeeze out the water.
