Categories     Chicken

Time 45m

Number Of Ingredients 7

4 - 6 boneless, skinless chicken breasts
kosher salt & pepper to taste
3/4 c brown sugar
1/8 - 1/4 c cayenne pepper sauce
1/4 c cider vinegar
2 Tbsp vegetable oil
1/2 c mustard

Steps:

  • 1. Preheat oven to 350 degree F. Line a baking sheet with foil and spray with non stick cooking spray. Remove any excess fat from chicken, rinse and pat dry. Salt & pepper both sides, place on sheet. Bake for about 20 minutes or until just about done.
  • 2. While chicken bakes, make sauce. Place all ingredients in a medium saucepan, and over medium heat, bring to a boil. Lower heat and simmer until about the consistency of pancake syrup. It will darken as it thickens.
  • 3. Once chicken is just about done, pour or spoon half the sauce over the chicken. Bake another 10 minutes or until the sauce is set on the chicken. I baste a few times before removing from oven. Keep remaining sauce warmed, to drizzle over chicken as serving.
  • 4. Plate the chicken and drizzle with the warmed sauce, if desired. Enjoy! We think it's finger licking good!

Tips:

  • To ensure crispy chicken, pat the chicken dry with paper towels before seasoning and baking. This will help remove excess moisture, allowing the skin to crisp up in the oven.
  • For a spicier kick, increase the amount of cayenne pepper or chili powder in the spice rub. You can also add a dash of smoked paprika for a smoky flavor.
  • If you don't have a smoker, you can still achieve a smoky flavor by adding a few drops of liquid smoke to the BBQ sauce. You can also bake the chicken on a bed of wood chips for a more intense smoky flavor.
  • To prevent the chicken from drying out, baste it with the BBQ sauce every 15-20 minutes during baking. This will help keep the chicken moist and juicy.
  • For a crispy, caramelized crust, broil the chicken for the last few minutes of baking. Keep a close eye on the chicken to prevent burning.

Conclusion:

Spicy BBQ Baked Chicken is a flavorful and versatile dish that can be enjoyed for lunch, dinner, or even as a game-day snack. With its crispy skin, juicy meat, and tangy BBQ sauce, this chicken is sure to be a hit with everyone who tries it.
