1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon dry mustard
1/8 teaspoon freshly ground nutmeg
4 tablespoons sour cream
1 large egg, beaten
1 cup heavy cream
1 cup half-and-half
1/4 cup finely grated onions
4 slices bread
1 tablespoon butter
Special equipment: 2-quart baking dish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss together the pasta with the cheese cubes and pour into the baking dish.

1/2 red pepper, diced

10 baby carrots, sliced thinly
2 cups whole wheat pasta, elbow macaroni, rotini, penne, etc.
1/4 cup olive oil
1 garlic clove, minced
3 Tbsp. all-purpose flour
1 1/2 cups milk
2 cups 8 oz. Sargento® Shredded Sharp Cheddar Cheese
1/2 tsp. crushed red pepper flakes
1/2 tsp. cayenne pepper
Salt and pepper, to taste
2 Tbsp. panko breadcrumbs

Steps:

  • Preheat oven to 400 degrees F. Set a medium pot of salted water to boil. Prepare a large baking sheet by lining with aluminum foil and coating with a little olive oil or nonstick cooking spray.
  • Toss broccoli, red pepper, squash and carrots onto the baking sheet. Bake for 20 minutes, or until vegetables have softened. Remove from oven and set aside.
  • Once water is boiling, lower heat slightly and add pasta, cooking according to package instructions. Drain and set aside.

1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta
Kosher salt
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups whole milk
1 clove garlic, finely grated
1 teaspoon smoked or hot paprika
Freshly ground pepper
12 ounces sharp or white Cheddar cheese, grated
12 ounces fontina or Gruyère, grated
1 cup coarse bread crumbs or panko
4 tablespoons melted butter or olive oil
1/4 cup finely grated Parmesan cheese (optional)
Kosher salt and freshly ground pepper

Steps:

  • Cook pasta in a large pot of salted boiling water until it's barely al dente. (It should be more al dente than your average pasta: It's going to continue to cook in the oven.) Drain and set aside.
  • Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping.   • Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
  • Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. 8 ounces pasta (Macaroni, Shells, or penne work well)
2 cups shredded cheddar cheese
1 cup shredded monterey jack pepper cheese
1 tablespoon butter
1 egg, beaten
1 cup milk (approximately)
1/4 teaspoon cayenne pepper
1 teaspoon paprika
salt & pepper
1/4-1/2 cup breadcrumbs

Steps:

  • Grease a shallow baking dish and Preheat oven to 350-375 F.
  • Cook pasta until about 2 min shy of done according to package, drain.
  • Back in the pan, mix pasta with butter, then egg, cheese, cayenne, paprika, and salt and pepper to taste.
  • Pour pasta mixture into the baking dish and spread out evenly.
  • Fill with enough milk to almost cover the pasta.
  • Bake for 10 minutes, remove and stir to distribute any cheese clumps into the milk.
  • Bake another 15 minute Remove and top with bread bread crumbs.

3 tablespoons extra virgin olive oil
1 onion, chopped
2 garlic cloves, chopped
1 (14 1/2 ounce) can diced tomatoes
1 (10 ounce) spinach, chopped, thawed and drained of excess liquid
1/2 teaspoon red pepper flakes
1/2 cup breadcrumbs
1/4 cup grated parmesan cheese, plus
1/3 cup grated parmesan cheese
1/4 cup romano cheese, plus 1/3 cup
2 tablespoons butter, softened, plus
2 tablespoons butter, softened
12 ounces mozzarella cheese, cubed (about 2 cups)

Steps:

  • Preheat the oven to 350°F.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender, but still firm to the bite (about 8-10 minutes). Drain pasta.
  • In a large skillet, heat olive oil over medium heat. Add onion and garlic. Cook until the onion is golden, about 7 minutes. Add the tomatoes, spinach, and red pepper flakes. stir to combine ad cook until heated through, about 5 minutes.

This recipe, inspired by Stouffer's macaroni and cheese, delivers the best of all worlds: creamy, saucy comfort, with a consistency that's slightly more set than a stovetop version, thanks to a final bake in the oven. It stays voluptuous and molten as a result of a higher ratio of sauce to noodles, which are cooked completely so they don't soak up as much liquid. The Velveeta is necessary here, as it has sodium citrate, which prevents the sauce from separating in the oven. Elbow macaroni works fine, but cavatappi is an especially fun shape to eat with its telephone-cord bounciness.

1 pound cavatappi or elbow macaroni
1/2 cup unsalted butter
1/2 cup all-purpose flour
6 cups whole milk
1 pound sharp or extra-sharp yellow Cheddar, coarsely grated (5 1/4 cups)
8 ounces Velveeta, torn into pieces
4 ounces Pecorino Romano, coarsely grated (1 cup)
1/2 teaspoon dry mustard powder
1/4 teaspoon onion powder

  • To the pot, add the Cheddar, Velveeta, Pecorino Romano, mustard powder, onion powder and cayenne, and season generously with salt and black pepper. Whisk until the cheese is melted and smooth like nacho cheese. Add the drained pasta, breaking up any clumps, and stir until evenly coated in the cheese sauce. Taste and adjust seasoning with salt and pepper.
  • Transfer to a 9-by-13-inch baking pan or dish and bake until bubbling at the edges, 15 to 20 minutes. Serve immediately.
