- Preheat the oven to 325 degrees F.
- Cook the bacon in a large Dutch oven over medium heat until most of the fat is rendered. Add the onion and garlic and saute until soft. Stir in the chili powder. - Whisk green onions, 1 tablespoon black vinegar, honey, sesame oil, garlic, coriander, ground ginger, and 1/4 teaspoon red pepper flakes together in a bowl.
- Slice the tofu into bite-sized pieces. Place in a shallow baking pan. Add the green beans. Pour the sauce over everything. Allow to sit to marinate.
- Meanwhile, preheat the oven to 400 degrees F (200 degrees C).
- Combine rhubarb and jalapeno in a heavy-bottomed saucepan. Add coconut sugar, coconut aminos, remaining 1 tablespoon black vinegar, fresh ginger, and remaining 1/4 teaspoon red pepper flakes. Mix together. Allow to sit for 10 minutes. Turn the heat to medium. Bring to a boil then reduce to a simmer until the rhubarb and the jalapeno are soft, about 15 minutes.
- Cover the tofu and green beans with aluminum foil. Bake in the preheated oven until the green beans are tender to a fork, about 30 minutes.
- Uncover and remove the green beans. Set them aside to keep warm. Put the tofu back into the oven, uncovered, until the sauce is bubbly and has reduced, another 10 minutes.
- Meanwhile, roast the cashews by putting them onto a small oven-proof dish and roast while the tofu is baking. Roast until browned, about 10 minutes. When cool to touch, chop the cashews. Serve the tofu and beans topped with the rhubarb sauce, chopped cashews, and a lime wedge.

- Preheat oven to 350 degrees.
- Cook bacon in dutch oven until crisp. Drain all but 1 T. of fat.
- Add onions and cook until lightly browned.
- Add tomato paste, cook 2 minutes.

SPICY BBQ ROOT BEER BAKED BEANS

- Preheat oven to 350 degrees.
- Spray a 9 x 9 inch baking pan (or 9 x 13 inch pan) with non stick cooking spray.
- Cook bacon over the stove until desired doneness (I like mine crunchy, but I usually do it a little underdone, because it bakes in the oven as well).
- After the bacon is cooked, crumble it up into a bowl and add black pepper and maple syrup. Toss until well combined.
- In a larger bowl, combine the baked beans, root beer, brown sugar, molasses and cayenne pepper.
- Add in half of the bacon crumbles.
- Pour the mixture into the sprayed pan. Sprinkle the rest of the bacon on top, as well as the jalapeños if desired.
- Bake for 25 minutes, or until the center is heated through, and the edges begin to bubble.
- Remove from oven and eat warm.

I originally got this recipe from Eating Well magazine. It was a baked beans and sausage dish. We were making bbq chicken on the grill, so I figured why not try it without the sausage. My bf said it was way better than the original recipe, so I thought I should post it. Feel free to experiment with the beans. I have made it with white kidneys beans and it is still yummy. If you are watching your weight this is a great, easy to prepare side dish for the summer months! Note: Make sure to rinse the beans it will cut down the sodium in this dish, so don't be afraid of the nutrition facts. I don't think recipezaar takes into account rinsing the beans when it figures the nutrition information.

- Preheat the oven to 210 degrees (gas 6-7).
- Rinse the sweet potatoes, then pierce with a small sharp knife. Place them on a baking.
- tray and bake for 1-1½ hours, or until soft.
- Heat the oil in a large saucepan and cook the onion over a medium heat for about 5 minutes, stirring occasionally, until very soft and golden. Add garlic and spices, and cook, stirring, for 1 minute.

SPICY BARBECUE SAUCE BAKED BEANS

- For barbecue sauce, sauté onions and garlic in canola oil until slightly golden. Add remaining suace ingredients, stir and simmer about 45 minutes. Makes about 3-1/2 cups For baked beans: Sauté the bacon until almost done. Add this to sauce ingredients. Cook the beans until tender, then add enough sauce to cover, and bake at 300 3-5 hours.
SPICY BAKED BEANS
Steps:
- 1. Place all beans in a bowl, cover with water to a depth of 2 inches, add thyme and soak at least 4 hours. 2. Heat a heavy 3-quart casserole. Add cumin seeds, and cook, stirring, until they dance around and smell toasty. Remove them. 3. Add the oil, onion, carrot and bacon to casserole, and saute over medium heat 10 minutes, until the bacon is golden. Stir in the jalapeno, garlic and toasted cumin seeds. 4. Preheat oven to 250 degrees. 5. Drain beans, and add them along with the canned and fresh tomatoes, maple syrup, brown sugar, bay leaf, orange rind and crushed peppercorns. Stir in all but 1 tablespoon of the coriander, and add 3 cups of water. Cover, and bring to a slow simmer. Place in the oven, and cook 2 hours. 6. Add vinegar and salt to taste. Return to the oven 2 1/2 hours longer, until the liquid has been absorbed but the beans are still moist. Adjust seasonings, adding more vinegar and salt if needed. Sprinkle with remaining coriander, and serve
