Time 1h35m

Yield 10 to 12 servings

Number Of Ingredients 7

Two 8-ounce cans whole water chestnuts, drained and rinsed
2 tablespoons low-sodium soy sauce
14 slices bacon, cut crosswise into thirds
1/3 cup ketchup
1/3 cup firmly-packed dark brown sugar1 tablespoon Worcestershire sauce
Nonstick cooking spray
Freshly ground black pepper

Steps:

  • Combine the water chestnuts and soy sauce in a resealable plastic bag and let marinate at room temperature, tossing and massaging the bag occasionally, for 30 minutes.
  • Preheat the oven to 400 degrees F. Wrap each water chestnut in a piece of bacon and secure with a toothpick. Set a cooling rack into a rimmed baking sheet and arrange the bacon-wrapped water chestnuts on top. Bake until the bacon renders its fat and is crisp, about 30 minutes.
  • Meanwhile, stir together the ketchup, brown sugar, Worcestershire sauce and 1/3 cup water in a bowl to make a sauce.
  • Remove the baking sheet from the oven and carefully lift the cooling rack off the baking sheet. Drain away any fat in the baking sheet and wipe dry with paper towels. Line the baking sheet with foil and lightly spray the foil with nonstick cooking spray. Carefully transfer the bacon-wrapped water chestnuts to the bowl with the sauce, swirling to fully coat, then spread out on the baking sheet.
  • Return the baking sheet to the oven and bake, tossing every few minutes, until the sauce is reduced to a sticky glaze, about 15 minutes. Immediately transfer the bacon-wrapped water chestnuts to a warm serving platter. Sprinkle with pepper and serve while hot.

SPICY BACON WRAPPED WATER CHESTNUTS

Spicy Bacon Wrapped Water Chestnuts image

Just made these for our family Christmas Party. They were such a hit! I found this recipe online but this is my tweaked version. Everyone wanted the recipe so I thought it was worth posting. Enjoy...we sure did!

Provided by Jen Gordon @Jengy

Categories     Appetizers

Number Of Ingredients 8

4 can(s) whole water chestnuts (drained)
2 1/2 pound(s) bacon
1 cup(s) mayo
1 cup(s) brown sugar, firmly packed
1/2 cup(s) heinz chili sauce
2 teaspoon(s) cajun seasoning ( i used emeril's essence)
1/2 teaspoon(s) cayenne pepper
1/2 cup(s) soy sauce

Steps:

  • Place water chestnuts in medium bowl and add soy sauce. Marinate while preparing bacon. Pre-heat oven to 350.
  • Pre-cook bacon in microwave. On a dinner plate place 5 slices on 2 paper towels. Place 2 more paper towels on top and add another 5 slices of bacon. Cover with 2 more paper towels and cook on high for 3/12 to 4 minutes. Repeat process until you have precooked all bacon. This partially cooks the bacon as well as releasing much of the grease before wrapping. You may be able to do more layers at one time but I was following a Rachel Ray recipe for microwave bacon and was afraid to deviate.
  • Stack bacon slices and cut in half. Wrap each half around a water chestnut and secure with toothpick. After wrapping place in an ungreased 9 x 13 glass or ceramic baking dish. (You will need 2 baking dishes.)
  • In another medium bowl whisk together mayo, brown sugar, chili sauce, Cajun seasoning and cayenne pepper until blended.
  • Pour evenly over the wrapped chestnuts and place in oven for 30-35 minutes. If bacon does not look quite done enough switch the oven to broil for about 5 minutes. (I used a bottle with a nozzle top...like a hair color bottle to drizzle sauce. It worked great!)
  • Remove from oven and transfer them to a pretty serving platter...but they won't be there long. :)

Tips:

  • Choose the right water chestnuts. Look for water chestnuts that are firm and white, with no blemishes or bruises. Avoid any that are soft or discolored.
  • Slice the water chestnuts thinly. This will help them to cook evenly and absorb the flavors of the marinade.
  • Marinate the water chestnuts for at least 30 minutes. This will help them to absorb the flavors of the marinade and become more tender.
  • Wrap the water chestnuts in bacon tightly. This will help to keep them from falling apart while they are cooking.
  • Cook the water chestnuts over medium heat. This will help to prevent them from burning.
  • Serve the water chestnuts hot. They can be served as an appetizer or a side dish.

Conclusion:

Spicy bacon-wrapped water chestnuts are a delicious and easy-to-make appetizer or side dish. They are perfect for parties or potlucks. With a few simple ingredients, you can create a dish that is sure to impress your guests. So next time you are looking for a new appetizer or side dish, give spicy bacon-wrapped water chestnuts a try. You won't be disappointed!
