Time 2h30m

Yield 18 servings

Number Of Ingredients 13

4 slices regular bacon, diced
1 medium onion, cut into small dice
1 medium green bell pepper, cut into small dice
1 red bell pepper, cut into small dice
1 fresh jalapeno, chopped
4 large cans (28 ounces each) pork and beans
1 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled or cider vinegar
2 tablespoons ketchup
1 tablespoon yellow mustard
2 chipotle peppers, minced
6 slices thin bacon

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

Think homemade barbecue sauce with creamy white beans swimming around. The sweetness from the molasses is balanced by the salty, crispy bacon.

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 17

5 thick-cut slices bacon (140 grams)
1 medium yellow onion (190 grams), chopped
1 red bell pepper (200 grams), chopped
Kosher salt
2 garlic cloves, chopped
1 to 2 tablespoons harissa
1 teaspoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon ground cayenne
1/4 teaspoon ground cinnamon
One 15-ounce (425 grams) can tomato sauce
1/4 cup (60 grams) molasses
2 tablespoons (30 grams) balsamic vinegar
1 cup low-sodium chicken stock or water
Two 15.5-ounce cans navy beans, rinsed and drained
Sliced scallions, for finishing
Cilantro leaves, for finishing

Steps:

  • Arrange the bacon in a large cast iron skillet or 3-quart braiser over medium heat. Cook, rendering the fat and crisping the bacon, about 4 to 5 minutes per side. Remove to a paper towel-lined plate to drain. When cool, roughly chop the bacon. Set aside.
  • Leave the bacon grease in the pan and add the onion and bell pepper. Season with salt. Cook, stirring occasionally, until the vegetables begin to soften, 4 to 5 minutes. Add the garlic, harissa, coriander, cumin, cayenne and cinnamon and stir to combine and toast until the spices are fragrant. Add the tomato sauce, molasses, vinegar, stock or water and half of the bacon. Season again with a pinch of salt. Bring to a boil over medium-high heat and reduce to a simmer. Stir in the beans. Simmer rapidly until thickened, about 15 minutes. Season to taste. To store, let beans come to room temperature and refrigerate in a covered container. You can make the beans up to 2 days in advance and just reheat.
  • Sprinkle with the remaining bacon, the scallions and cilantro. Serve immediately.

SPICY BAKED BEANS

Spicy Baked Beans image

Tangy and sweet old-fashioned baked beans with a little jalapeno. They're easy to make and great at a BBQ, hamburger night, a picnic, etc. My husband's favorite semi-homemade recipe. Says the sweetness and fire create a super depth of flavor. It's not strong enough to overwhelm the sweet home-style of baked beans.

Tips:

  • Use high-quality bacon: The better the bacon, the better the beans will taste. Look for bacon that is thick-cut and has a good amount of marbling.
  • Don't skimp on the spices: The spices are what give these beans their flavor, so don't be afraid to use plenty of them. Chili powder, cumin, and paprika are all essential, but you can also add other spices to your taste.
  • Use a variety of beans: Don't just use one type of bean in your baked beans. Using a variety of beans will give them a more interesting texture and flavor. Pinto beans, kidney beans, and black beans are all good choices.
  • Cook the beans until they are tender: The beans should be tender but still hold their shape. If you overcook them, they will become mushy.
  • Let the beans cool before serving: This will allow the flavors to meld together and the beans to thicken up.

Conclusion:

Spicy bacon baked beans are a delicious and easy-to-make dish that is perfect for any occasion. They are packed with flavor and can be served as a main course or a side dish. Whether you are having a cookout, a potluck, or a family dinner, these beans are sure to be a hit. So next time you are looking for a new recipe to try, give these spicy bacon baked beans a try. You won't be disappointed.
