ALMOST-FAMOUS HONEY-ROASTED PEANUTS

Almost-Famous Honey-Roasted Peanuts image

Nuts4Nuts started as a single pushcart in New York City in 1993. But now, on any given day, more than 80 carts are parked all over Manhattan, dishing out little wax-paper bags of warm candied peanuts. Locals and tourists love the signature treat, and they really go nuts this time of year: Sales double during cold-weather months. The business owners won't part with their famous recipe, but the chefs in Food Network Kitchens crafted this version, and it's just as sweet.

Time 30m

Yield 2 cups

Number Of Ingredients 6

Cooking spray
3/4 cup sugar
1 tablespoons honey
2 teaspoons vanilla extract
Kosher salt
2 cups unsalted raw peanuts

Steps:

  • Preheat the oven to 400 ̊ F. Lightly coat a rimmed baking sheet with cooking spray.
  • Combine the sugar, honey, 3 tablespoons water, the vanilla and 1⁄2 teaspoon salt in a large heavy-bottomed pot. Cook over medium heat, stirring with a wooden spoon, until the sugar dissolves. Add the peanuts and cook, stirring occasionally, until the mixture begins simmering, about 1 minute. Continue cooking, stirring constantly, until the sugar mixture dries out and clings to the nuts, 2 to 4 more minutes. Pour onto the prepared baking sheet and spread in an even layer.
  • Bake the nuts until the sugar coating begins melting, about 10 minutes. Stir, then continue baking until the nuts are golden brown and glazed in spots, 2 to 4 more minutes. Remove the baking sheet from the oven and stir the nuts to distribute the caramel. Let cool on the baking sheet. Store, covered, at room temperature for up to 1 week.

Number Of Ingredients 18

1 cup mayonnaise
2 tablespoons toasted sesame oil
2 tablespoons mirin or rice-wine vinegar
1/4 cup chili sauce
3 tablespoons freshly squeezed lime juice
1 tablespoon grated ginger
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
2 teaspoons sesame seeds
1/2 small head red cabbage (about 1 pound)
1/2 head napa cabbage (about 1 pound)
1 turnip, peeled (about 9 ounces)
1 small daikon, peeled (about 8 ounces)
1 large carrot, peeled
4 scallions, thinly sliced on the diagonal
1 red bell pepper, seeded and thinly sliced
1/4 cup finely chopped fresh mint leaves
1/4 cup finely chopped fresh cilantro

Steps:

  • Make the dressing: In a medium bowl, whisk together mayonnaise, sesame oil, vinegar, chili sauce, lime juice, ginger, salt, pepper, and sesame seeds; set dressing aside.
  • Make the slaw: Core the red and napa cabbages, quarter, and slice very thinly. Transfer to a large bowl. Fill bowl with cold water to cover cabbage. Swish cabbage around with hands so any dirt settles to the bottom of the bowl. Lift cabbage, and transfer to a colander to drain. Place in large bowl; set aside.
  • Using the large holes of a box grater, grate the turnip, daikon, and carrot. Add to bowl of cabbage along with scallions, red bell pepper, mint, and cilantro. Add reserved dressing, and toss to combine. Cover with plastic wrap, and let sit at least 2 hours in the refrigerator, but preferably overnight. Serve chilled. Will keep in refrigerator for up to 4 days.

Yield 2 cups

Number Of Ingredients 8

2 cups shelled raw Spanish peanuts (10 oz.)
4 teaspoons Worcestershire sauce
1 tablespoon liquid smoke
2 tablespoons butter
2 teaspoons white vinegar
2 teaspoons hot pepper sauce
3/4 teaspoon salt
1/8 teaspoon cayenne pepper

  • Line a large baking sheet with foil.
  • In a bowl, toss together the peanuts, Worcestershire sauce and liquid smoke.
  • Let stand at room temperature for 30 minutes, stirring now and then.
  • Preheat the oven to 325^F.
  • Have the oven rack positioned in the center of the oven.
  • In a large heavy skillet, melt the butter over medium low heat.
  • Cool a little then add the vinegar, hot pepper sauce, salt, and cayenne pepper.
  • Return the skillet to the heat and add the peanuts and marinade.
  • Stir to coat evenly, about 30 seconds.
  • Spread the peanuts on the baking sheet and bake until deep golden brown, stirring now and then, for about 20 minutes.
  • Cool on a rack uncovered for at least 6 hours to dry.
  • Store at room temperature in an air tight container.

Tips:

  • For a spicier slaw, use a hotter variety of chili pepper, such as a serrano or habanero pepper. You can also add a pinch of cayenne pepper or red pepper flakes to the dressing.
  • To make the slaw ahead of time, prepare the dressing and vegetables up to 24 hours in advance. Store the dressing and vegetables separately in airtight containers in the refrigerator. When ready to serve, toss the vegetables with the dressing and peanuts.
  • If you don't have time to roast the peanuts, you can use store-bought roasted peanuts. However, roasting your own peanuts gives them a more intense flavor.
  • This slaw is also delicious served as a wrap or sandwich filling. Try it with grilled chicken or tofu, avocado, and a drizzle of dressing.

Conclusion:

This spicy Asian slaw is a refreshing and flavorful side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like it spicy or mild, this slaw is sure to please everyone at your table.
