Mom's Spiced Zucchini Bread image

This zucchini bread recipe is super moist and super spicy, loaded with cinnamon, nutmeg, and cloves. I tried several recipes before I asked my mom for her recipe. I go to the farmers market every Saturday and get these huge zucchinis, and this is the perfect use for them. It reminds me of my childhood. The loaves can be frozen and are great as gifts. People love them.

SPICED ZUCCHINI BREAD

Spiced Zucchini Bread image

My mother made this many summers while I was growing up. She would make large batches of them and freeze them. I have eaten other people's zucchini bread over the years, but none were as moist or yummy as mom's. I dug this recipe out after a recent group discussion and thought I would also post it here. I hope you try it and...

Time 1h15m

Number Of Ingredients 10

1 stick butter or margarine
1 c sugar
2 eggs
1 3/4 c flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp nutmeg
1 c zucchini (raw, finely grated, unpeeled; packed but not too tightly)
1/2 c walnuts
1 tsp vanilla

Steps:

  • 1. Cream butter and sugar together. Beat in eggs. Combine dry ingredients in a seperate bowl. Stir half of the dry ingredients into the creamed mixture. Stir in the zucchini. Add the remaining dry ingredients. Add nuts and vanilla. Mix well. Pour into a greased loaf pan (9x5x3). Bake at 350 degrees for 50-60 min. Makes one loaf.

Tips:

  • Use fresh zucchini: Fresh zucchini has a higher water content than older zucchini, which will help keep your bread moist.
  • Grate the zucchini finely: This will help it distribute evenly throughout the bread.
  • Don't overmix the batter: Overmixing can make the bread tough. Mix just until the ingredients are combined.
  • Bake the bread at a moderate temperature: This will help prevent the bread from drying out.
  • Let the bread cool completely before slicing: This will help it hold its shape.

Conclusion:

This spiced zucchini bread is a delicious and easy-to-make treat that is perfect for any occasion. The bread is moist and flavorful, with a hint of spice from the cinnamon, nutmeg, and ginger. It's also a great way to use up any extra zucchini you may have on hand. So next time you're looking for a quick and easy bread recipe, give this spiced zucchini bread a try. You won't be disappointed!
