Steps:
- Heat oil in a large, deep skillet over low heat. Add onions and a pinch of salt. Cover and cook, stirring frequently, until onions are soft but not browned, 20 to 25 minutes. Increase heat to medium-high, uncover, and continue cooking until onions are lightly browned. Add cumin and wine and cook until liquid is almost completely evaporated, 4 to 5 minutes. Add tomatoes and season with salt and pepper.
- Place allspice, cloves, cinnamon sticks, and coriander seeds in a piece of cheese cloth; tie with a piece of twine to enclose. Add spice bundle to onion mixture, cover, and let simmer until thickened, about 20 minutes. Uncover, and stir in parsley; season with salt and pepper. Remove spice bundle from skillet, remove skillet from heat; keep warm until ready to serve.
Tips:
- Select ripe and fresh tomatoes: The quality of your tomatoes will greatly impact the taste of your salsa. Choose ripe, juicy tomatoes that are free of blemishes and bruises.
- Roast the tomatoes before blending: Roasting the tomatoes intensifies their flavor and gives the salsa a smoky depth of flavor. You can roast the tomatoes in a hot oven or over a grill.
- Use a variety of spices: This recipe uses a blend of cumin, coriander, and chili powder, but you can adjust the spices to your liking. Experiment with different combinations to find your perfect flavor profile.
- Don't over-blend the salsa: Salsa is best when it has a chunky texture. Over-blending will make it too smooth and watery.
- Chill the salsa before serving: Chilled salsa is more refreshing and flavorful. Let the salsa chill in the refrigerator for at least 30 minutes before serving.
Conclusion:
This spiced tomato salsa is a versatile condiment that can be used in a variety of dishes. It's perfect for tacos, burritos, enchiladas, and nachos. You can also use it as a dip for chips or vegetables. No matter how you choose to use it, this salsa is sure to be a hit.
