SPICED RICE SALAD

This is so good. I found it in a promotional salad cookbook. It is a beautiful salad and absolutely different and delicious! It is so easy and I am always asked for the recipe. I use a lot of extra pistachios, lime wedges & cilantro as garnish.

1/3 cup pistachio nut (toasted, if you like)

  • Cook the rice perfectly: Follow the package directions for cooking the rice, or use a rice cooker. Be sure to drain the rice well after cooking.
  • Let the rice cool completely: Before adding the other ingredients, let the rice cool completely. This will help prevent the rice from becoming mushy.
  • Use a variety of vegetables: The more vegetables you add to your rice salad, the more flavorful it will be. Choose a variety of colors and textures, such as chopped bell peppers, carrots, celery, cucumber, and tomatoes.
  • Add some protein: To make your rice salad a more complete meal, add some protein. Grilled chicken, shrimp, or tofu are all great options.
  • Use a flavorful dressing: A good dressing will bring all the flavors of your rice salad together. Try a vinaigrette, a creamy dressing, or a simple mixture of olive oil and lemon juice.
  • Garnish your salad: Before serving, garnish your rice salad with fresh herbs, such as cilantro, parsley, or basil. This will add a pop of color and flavor.

Conclusion:

Spiced rice salad is a delicious and versatile dish that can be enjoyed for lunch, dinner, or a side dish. It's easy to make and can be tailored to your own preferences. With its combination of flavors and textures, spiced rice salad is sure to be a hit with everyone who tries it.
