I was trying to use up our plum harvest and became inspired to try and make a wholesome version of a pineapple upside-down cake using plums.

1 cup rolled oats
½ cup boiling water
1 cup brown sugar
½ cup butter, softened
½ cup white sugar
2 eggs, room temperature
1 ½ teaspoons vanilla extract
1 ½ cups whole wheat flour
1 ½ teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
½ teaspoon sea salt
¼ teaspoon ground allspice
2 tablespoons butter
¼ cup raw sugar
¼ teaspoon ground cinnamon, or more to taste
1 ½ cups diced plums

1 tablespoon honey
6 large plums, halved, pitted, each half cut into 6 wedges

1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup sugar
2 large eggs
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
