COUSCOUS & ROASTED SPICED CHICKPEAS & PINE NUTS

Couscous & Roasted Spiced Chickpeas & Pine Nuts image

This is a great flavourful vegetarian dish or serve along side meat or seafood. You can use regular couscous but the large grain Israeli couscous is the best I think. If you use the Israeli couscous increase the water to 3 cups and cook till done, drain if necessary, I slightly saute the spinach for mine.

PEARL (ISRAELI) COUSCOUS WITH GARAM MASALA AND PINE NUTS

Pearl (Israeli) Couscous With Garam Masala and Pine Nuts image

Pearl (Israeli) couscous is more like barley in texture, and takes a little longer to cook. Look for it in the ethnic section, or in the pasta section of larger supermarkets. Try to find the "instant" kind, that cooks it 10 minutes. If you can't find it, you may have to add more liquid and cook longer. This one has a touch of East Indian spices. Good with grilled salmon or pork tenderloin. There are as many variations of Garam Masala (spice mix) as there are cooks :). I like mine with a tad more cinnamon than some. There are several recipes here on 'Zaar, or you can buy it in specialty shops or larger supermarkets.

PEARL COUSCOUS SALAD

Pearl Couscous Salad image

This is a take-off of a pricey deli salad that my family loves. Using ingredients at home, it is much more affordable so we can enjoy it more often. Store salad in the fridge, covered, for up to a week.

Tips:

  • Choose high-quality couscous: Opt for pearl couscous made from whole wheat or semolina for a more nutritious and flavorful dish.
  • Toast the couscous: Toasting the couscous before cooking enhances its nutty flavor and aroma. Make sure to stir constantly to prevent burning.
  • Use a flavorful broth: Instead of water, use vegetable or chicken broth for added flavor. You can also add a splash of lemon juice or white wine for a tangy twist.
  • Don't overcook the couscous: Cook the couscous according to the package instructions, but keep an eye on it to prevent overcooking. Overcooked couscous can become mushy and lose its texture.
  • Add your favorite vegetables: Feel free to add your favorite vegetables to the couscous, such as chopped carrots, zucchini, bell peppers, or tomatoes.
  • Experiment with different spices: The spices used in this recipe can be adjusted to your taste preferences. Try adding a pinch of cayenne pepper for a spicy kick or a teaspoon of ground cinnamon for a warm, sweet flavor.

Spiced pearl couscous with pine nuts is a versatile and flavorful dish that can be enjoyed as a main course or a side.
