Yield Makes About 1 1/2 cups

Number Of Ingredients 9

1/4 cup olive oil
1 pound Maui onions, diced
3 garlic cloves, chopped
1/4 cup balsamic vinegar
1/4 cup (packed) golden brown sugar
2 tablespoons tomato paste
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg

Steps:

  • Heat oil in heavy medium skillet over medium-high heat. Add onions and garlic; sauté until onions just begin to brown, about 10 minutes. Add vinegar and sugar and cook 5 minutes, stirring often. Stir in tomato paste, ginger, cloves and nutmeg. Reduce heat to low and simmer until marmalade is thick, stirring often, about 1 minute. Season with salt and pepper. (Can be made 5 days ahead. Cover and chill. Rewarm before serving.)

Tips:

  • Choose the right onions. Yellow or white onions are best for this recipe, as they have a milder flavor than red onions.
  • Slice the onions thinly and evenly. This will help them cook evenly and caramelize properly.
  • Use a heavy-bottomed pot or Dutch oven to make the marmalade. This will help prevent the onions from burning.
  • Cook the onions slowly and patiently. It will take about 1 hour for the onions to caramelize and become soft.
  • Add the spices and vinegar towards the end of the cooking process. This will prevent the spices from losing their flavor.
  • Allow the marmalade to cool completely before storing it. This will help it thicken and develop its full flavor.

Conclusion:

Spiced onion marmalade is a delicious and versatile condiment that can be used in a variety of ways. It is perfect for topping burgers, hot dogs, and sandwiches, or it can be used as a dipping sauce for chicken, fish, or vegetables. It can also be added to salads, dressings, and marinades. With its sweet and savory flavor, spiced onion marmalade is sure to be a hit with everyone who tries it.
