PUMPKIN EGGNOG

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 8

One 14-ounce can sweetened condensed milk
1 1/2 cups heavy cream
1 cup pumpkin puree
Pinch ground cloves
8 large egg yolks
1 cup sugar
1/2 cup bourbon
8 ice cubes

Steps:

  • Prepare a bowl set into a large bowl filled with ice and water and set aside.
  • Combine the condensed milk, cream, pumpkin puree and cloves in a medium heavy-bottomed saucepan over medium heat. Cook, whisking, until just below simmering. Place the egg yolks in a bowl and whisk to combine. Slowly add some of the warm cream mixture (about 1/4 cup) to the yolks, whisking constantly (this is called tempering and will prevent the yolks from curdling). Then, whisk the tempered egg yolk mixture into the saucepan. Remove from the heat and cool down by pouring the mixture into the prepared bowl. Stir occasionally, until completely cooled down.
  • Place the mixture into a blender along with the sugar, bourbon and ice cubes. Blend until smooth. To serve, fill rocks glasses with ice and pour the eggnog over.

Tips for Perfect Spiced Eggnog-Pumpkin Pie:

- For a smooth and creamy filling, ensure the cream cheese and eggs are at room temperature before mixing. This helps them blend together seamlessly and prevents lumps. - Don't over-mix the filling, as this can make it dense and tough. Mix just until the ingredients are well combined. - Use a graham cracker crust for a classic flavor and texture. If you prefer a different type of crust, such as a chocolate cookie crust or a pastry crust, make sure it's sturdy enough to hold the filling. - Bake the pie at a high temperature initially (425°F) to set the crust and prevent a soggy bottom. Then, reduce the temperature (to 350°F) to finish baking the filling without overcooking the crust. - Let the pie cool completely before serving. This allows the filling to set properly and the flavors to develop fully. - Top the pie with whipped cream or a dollop of eggnog for an extra festive touch.

Conclusion:

This spiced eggnog-pumpkin pie is a unique and delightful holiday dessert that combines the classic flavors of eggnog and pumpkin pie. With its creamy filling, flaky crust, and aromatic spices, it's sure to be a hit at your next gathering. Whether you're a fan of eggnog, pumpkin pie, or both, this recipe is a must-try. So gather your ingredients, preheat your oven, and let's bake a pie!
