Time 1h20m

Number Of Ingredients 18

1/3 c butter, softened
1 2/3 c sugar
2 eggs
2 egg whites
1/2 c buttermilk
1/2 c unsweetened applesauce
3 tsp vanilla extract
2 1/2 c all purpose flour
1/2 c baking cocoa
1 tsp baking powder
1 tsp ground cinnamon
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground allspice
2 c grated peeled tart apples
1/2 c chopped walnuts, toasted
1/2 c miniature semisweet chocolate chips
1/2 tsp confectioners' sugar

Steps:

  • 1. In a large bowl, beat together butter and sugar until crumbly, about 2 minutes. Add eggs, then egg whites, beating well after each addition. Beat in the buttermilk, applesauce, and vanilla (mixture will appear curdled).
  • 2. In a separate bowl, combine the flour, cocoa, baking powder, cinnamon, baking soda, salt, and allspice; stir into the butter mixture just until blended. Stir in the apples, walnuts, and chips.
  • 3. Transfer the mixture to a 10-inch fluted tube pan that has been sprayed with cooking spray.
  • 4. Bake in a preheated 325-degree oven for 50 to 60 minutes, or until a toothpick inserted near the center comes out clean.
  • 5. Cool for 10 minutes before removing from the pan to a wire rack to cool completely. Sprinkle with confectioner's sugar and serve.

Tips:

  • Use a quality cocoa powder. The quality of your cocoa powder will make a big difference in the flavor of your cake. Look for a cocoa powder that is dark and unsweetened, and has a rich, chocolatey aroma.
  • Don't overmix the batter. Overmixing the batter will make the cake tough. Mix the batter just until the ingredients are combined.
  • Bake the cake at the right temperature. The cake should be baked at a moderate temperature so that it has time to rise and cook through without drying out.
  • Let the cake cool completely before frosting it. This will help the frosting to set properly.

Conclusion:

Spiced cocoa apple cake is a delicious and easy-to-make cake that is perfect for any occasion. The cake is moist and flavorful, with a tender crumb and a rich chocolate frosting. The apples add a touch of sweetness and crunch, and the spices give the cake a warm and inviting flavor. Whether you're serving it for breakfast, dessert, or a snack, this cake is sure to be a hit.
