Steps:
- 1. Toss together the carrots, garlic, coriander, paprika, 1/4 teaspoon pepper, and vinegar in a bowl.
- 2. Heat a splash of oil in a hot pan and add the onions. Cook until golden, about 5 minutes. Pour the onions over the carrots and toss to coat. Cover and refrigerate 2 hours and up to overnight.
- 3. Just before serving, add the cilantro leaves to the carrot mixture. Spread the Greek yogurt on the pita chips and serve alongside the carrot salad.
Tips:
- Choose the right carrots: Look for fresh, crisp carrots with a deep orange color. Avoid carrots that are limp or have blemishes.
- Shred the carrots finely: This will help them absorb the dressing better and make the salad more flavorful.
- Use a variety of spices: The spices in this salad are essential for its flavor. Don't be afraid to experiment with different spices to find a combination that you like.
- Let the salad marinate: This will allow the flavors to meld and develop. Marinate the salad for at least 30 minutes, or up to overnight.
- Serve the salad chilled: This salad is best served chilled. It can be served as a side dish or as a light lunch or dinner.
