SPICED CANDIED NUTS

Spiced Candied Nuts image

This is my mom's recipe; I don't know where she got it, but she sent them to me in personal 'care packages' for many, many years. They are very quick and easy to make, and they taste delicious.

Time 40m

Yield 3-4 cups

Number Of Ingredients 6

1 cup sugar
1 pinch salt
1/2 teaspoon ground cinnamon
6 tablespoons milk
1/2 teaspoon vanilla extract
2 -3 cups nutmeats (Best with walnuts! But works well with pecans or skin-on whole almonds)

Steps:

  • Combine sugar, salt, cinnamon and milk.
  • Cook slowly to soft ball stage (236-240 degF).
  • Remove from heat.
  • Immediately add vanilla and nuts.
  • Stir carefully until coating loses its gloss and is creamy.
  • Turn out on wax paper.
  • and spread out nuts using 2 forks, being careful not to get burned.
  • Cool to room temperature before storing.

Tips:

  • Choose the right nuts: For this recipe, harder nuts like pecans, almonds, and walnuts work best. Avoid softer nuts like cashews and pistachios, as they tend to burn easily.
  • Use fresh spices: Ground spices lose their flavor over time, so use fresh spices for the best results. If you don't have whole spices, you can substitute ground spices, but use half the amount.
  • Don't overcrowd the pan: When candying the nuts, make sure to spread them out in a single layer on the baking sheet. If they're too crowded, they won't cook evenly.
  • Watch the temperature: The key to successful candied nuts is to cook them at a low temperature for a long period of time. This allows the sugar to caramelize slowly and evenly.
  • Store properly: Candied nuts can be stored in an airtight container at room temperature for up to 2 weeks.

Conclusion:

Spiced candied nuts are a delicious and versatile treat that can be enjoyed on their own, added to trail mix, or used as a topping for yogurt, ice cream, or salads. They're also a great gift for friends and family. With a little planning and effort, you can easily make your own spiced candied nuts at home.
